Pumpkin Spice Toffee Cut Out Cookies

These pumpkin spice toffee cut out cookies are not your average cut out cookies. They are made with brown sugar and pumpkin pie spice with folded in bits of toffee. They are SO GOOD.

These are the perfect excuse to break out your fall cookie cutters. I used pumpkins, but you can use whatever cookie cutters that you have! If you don't have cookie cutters, you can use the mouth of a mason jar or cup to make circles!

They are super quick and easy to make, and take only about forty-five minutes of prep time, and only about nine minutes to bake! Amazing!

Ingredients

  • 2 sticks Butter
  • 1/2 c Granulated Sugar
  • 1/2 c Dark Brown Sugar
  • 1 Egg
  • 1 tbsp Vanilla Extract
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Salt
  • 3 cups All Purpose Flour
  • 1/2 cup Toffee Bits
Instructions

Preheat the oven to 375°F.
In a stand mixer, cream together the butter and sugars.
Then mix in the egg, vanilla, salt, and pumpkin pie spice.
Add the flour a little at a time, and continue mixing until well incorporated.
Fold in the toffee bits.
On a floured surface, roll out the the dough till 1/8″-1/4″ thick, and use a fall cookie cutter to cut twenty-four to thirty shapes into the dough.
Place the cut outs onto a baking sheet lined with parchment paper.
Chill the cookies in the refrigerator for thirty minutes before baking.
Bake for seven to nine minutes, or until done.
