Ingredients

  • ½ cup Butter, softened
  • ½ cup Sugar
  • 1 pc Egg
  • ½ tsp Vanilla Extract
  • 1⅔ cup Flour
  • 2 tsp Lemon Juice
  • ½ tsp Baking Soda
  • ¼ tsp Salt
  • 1½ tsp Cinnamon
  • Cinnamon and Sugar for the top
Instructions

Using a mixer with the paddle attachment, beat the soft butter and sugar together until it is light in color and fluffy.
Add the egg and fully mix it in.
Add all the remaining ingredients and only mix it until its fully combined. Don't over mix.
Use a baking scoop to scoop out the dough and roll it into small balls.
In a small bowl mix the sugar and cinnamon.
Once the cookie balls are done, place them in the cinnamon sugar bowl, one at a time, and flatten it out until it has a cookie shape. Both sides should be coated.
Place the cookies on a baking tray with parchment paper.
Pre heat the oven to 325°F and bake it for 8mins.
Eat it hot out of the oven or wait for it to cool down on a cooling rack.
Tips
  • Beat the butter and sugar really well. It will be fluffy and turn white.
  • Do not over mix the dough after adding the flour, only until the dough comes together. Over mixing will make the cookies hard.
  • Don't over bake the cookies, 8 mins should be enough. They will be a little soft when you pull it out but will harden a bit once they cool down.
