Whoopie Pies are one of the best sandwich cookies out there! Two cake like cookies with a delicious creamy cookie butter filling. In this easy whoopie pie recipe I’ve simplified the recipe to make sure anyone can make and enjoy these!

What are Whoopie Pies?


Whoopie Pies are an all-American treat that can be considered cake, cookie, cupcake or even pie 🤷🏻‍♀️.


Originally a cookie sandwich made of 2 chocolate cake style cookies filled with marshmallow cream, this dessert has seen countless delicious variations.


Here we are keeping the cookies classic and adding a cookie butter twist in the filling. Check out the different variations you can try below.


Where did Whoopie Pies get their name?


There is a decades old debate about the true origins of the Whoopie Pie, but according to Wikipedia the name seems to have come from a cake company called Berwick Cake Company of Massachusetts. They have been making Whoopie Pies since at least 1920.

What ingredients do you need to make this Easy Whoopie Pie Recipe and Cookie Butter Filling?


  • Milk of your choice, can be dairy or non-dairy
  • Vinegar
  • Egg
  • Oil, I use canola, but any non-flavor oil will do
  • Vanilla extract
  • Sugar
  • Flour
  • Baking soda
  • Salt
  • Cookie Butter
  • Butter (or a non-dairy alternative)
  • Confectioners Sugar


How to make Whoopie Pies from scratch?


  1. The first step is to make our “buttermilk” by mixing milk with vinegar.
  2. Next we want to whip up our egg and sugar and add oil and vinegar to form the base of our wet ingredients (not including the milk).
  3. Then we need to add in our dry ingredients and mix well to combine it all.
  4. Lastly we add in the milk and vinegar mixture gradually, mixing in a little bit at a time.
  5. Using a cookie scoop we then scoop batter to a prepared baking sheet and bake in a pre-heated oven.
  6. Preparing the cookie butter filling is really easy! Just mix the cookie butter with melted butter and add in the confectioners sugar and extra milk as needed.
  7. Once the cookies are cool and the filling is prepared you need to assemble the cookie sandwiches.
  8. Place about 2 spoonfuls of cookie butter filling onto the flat side of one cookie and top with another cookie.

Traditionally Whoopie Pies are filled with Marshmallow cream or marshmallow fluff. But over the years as the popularity of Whoopie Pies grew lots of different fillings have been used. See below for some great ideas.


Can Whoopie Pies be frozen?


The best way to make whoopie pies in advance is to freeze the cookies separately and store the filling in the fridge.


The cookies can be frozen for up to 2 months in an airtight container. For best results stack the cookies with parchment paper in between each cookie so that they don’t stick together. The cookie butter filling can stay good covered in the fridge for up to 3 days. When you are ready to serve just bring the cookies to room temperature and assemble.


How long do Whoopie Pies last?

Ingredients
Whoopie Pie Cookies
  • ½ cup almond milk or any milk -dairy or not- of your choice
  • ½ Tbsp vinegar
  • 1 L egg
  • ½ cup sugar
  • ¼ cup canola oil
  • ½ tsp vanilla extract
  • 1¼ cup all purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking soda
  • ¼ tsp sea salt
Cookie Butter Filling
  • 3 Tbsp butter or margarine
  • ¾ cup cookie butter
  • 1⅛ cup confectioners sugar
  • 2-4 Tbsp almond milk or other milk alternative
Instructions

Pre-heat oven to 350°. Line a baking sheet with parchment paper.
In a liquid measuring cup place ½ Tbsp of vinegar, then add milk until it reaches ½ cup combined. Mix with a fork and let set for 5 minutes.
Whisk egg and sugar in a large mixing bowl until frothy. Add oil and vanilla, mix until combined.
Add flour, cocoa powder, baking soda and salt and mix well.
Gradually pour in milk/vinegar mixture and fold to combine.
Scoop batter onto prepared baking sheet with a medium cookie scoop (approx. 1.5 Tbsp) with about 2 inches in between each cookie.
Bake for 10-12 minutes until center is set. Let cool on a cooling rack.
Cookie Butter Filling
In a medium sized microwave safe bowl melt butter/margarine.
Add cookie butter, confectioners sugar and 1 Tbsp of almond milk. Mix well with a fork until all combined.
Add the rest of the milk as needed to reach creamy consistency.
Assemble Whoopie Pies
Match up cooled cookies in pairs of similar shapes and sizes.
Spread about 2 Tablespoons of cookie butter filling on the flat side of one cookie and top with the other.
Continue with all the cookies and filling.
Tips
  • How to make these in advance: Bake the cookies up to 3 days in advance and store in a sealed container at room temperature. Prepare the filling up to a week in advance and store covered in the fridge, bring to room temperature before assembling.
