Flourless Peanut Butter Cookies

These flourless peanut butter cookies are the only pb cookies you need! They're full of peanut butter flavor, and have that iconic fork indentation. They're also rolled in raw sugar to make the outside slightly crisp and the inside perfectly soft. The trick to maximizing the peanut butter flavor is to leave out the flour. So these cookies are only made with 6 ingredients: brown sugar, granulated sugar, egg yolks, milk, vanilla extract, and peanut butter. It seems I'm developing a habit of making cookies with just egg yolks, mainly because I often have extra yolks in my fridge, but also because they create the perfect texture for just about any cookie. I hope you love these as much as I do!

For the Cookies:
  • 160g (3/4 cups plus 1 tbsp) brown sugar
  • 50g (1/4 cup) granulated sugar
  • 3 egg yolks
  • 2-3 tbsp milk
  • 1 tsp vanilla extract
  • 270g (1 cup) peanut butter
For Rolling:
  • 50g (1/4 cup) pure cane sugar (raw, demerara, or turbinado)

In a medium-sized bowl, whisk the brown sugar, granulated sugar, egg yolks, 2 tbsp milk, and vanilla for 1-2 minutes until fully combined and smooth.
Fold in the peanut butter with a rubber spatula, mixing for about 2-3 minutes to fully incorporate the peanut butter.
If the dough seems dry, add another tablespoon of milk.
Using a two tablespoon cookie scoop, scoop the cookie dough onto one baking sheet lined with parchment paper. Freeze cookie dough for 15 minutes.
After 15 minutes, roll each ball in the raw sugar, then place on a baking sheet two inches apart.
Press each cookie dough ball with a fork, then freeze for another 15 minutes.
While the cookie dough is freezing for the second time, preheat the oven to 325 degrees.
Bake the cookies for about 12-15 minutes. Allow to cool completely on the baking sheet.
