Vegan Tahini Oatmeal Chocolate Chip Cookies

These vegan tahini oatmeal chocolate chip cookies are loaded with oats and chocolate, but are refined sugar free and easily gluten free! The first time I tested these cookies, I was a little skeptical that they were going to be good, but once I tried them my jaw dropped. No big deal or anything, but I just created a healthy version of the quaker oats granola bars in the form of a warm cookie! Plus, that feeling when you nail a recipe on the first try is so amazing. Once you try these, you won't be missing the refined sugar or processed white flour. TBH, I would take one of these over a regular chocolate chip cookie any day.

A few extra baking tips

  • There are none. These cookies are so simple and so freaking good, you cannot mess them up!
  • BUT, a note on measurement: if you haven't already, I highly recommend you buy a kitchen scale! They're cheap and make the baking process so much quicker. Plus, less clean up!

Ingredients


  • 92g oat flour
  • 100g rolled oats
  • ½ tsp baking soda
  • ½ tsp salt
  • 80g coconut sugar
  • 56g coconut oil, melted
  • 64g tahini
  • 1 flax egg (1 tbsp flaxseed meal + 3 tbsp water)
  • 1 tsp vanilla
  • 100g semisweet chocolate chips

Instructions


Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
To make the flax egg, combine one tablespoon flaxseed meal and 3 tablespoons water, and allow to sit until ready to use.
In a small bowl, combine the oat flour, rolled oats, baking soda, and salt.
In a bigger bowl, whisk together the coconut sugar, melted coconut oil, tahini, flax egg, and vanilla.
Fold the dry ingredients into the wet ingredients. Then, fold in the chocolate chips.
Scoop two tablespoon sized balls and place two inches apart on the baking sheet. Flatten each ball of dough out slightly and top with additional chocolate chips, if desired.
Bake the cookies for 8-10 minutes. Top with flaky sea salt and enjoy!
