A few weeks ago I was standing in line at the checkout counter at Home Goods. You know, where you’ve shopped for too long and you’re craving a healthy snack like an almond butter protein ball? That was me. With a cart full of home decorating items and needing a little pick-me-up snack I was getting desperate!

Since I’ve been eating healthy and on a weight loss mission, finding a quick snack is no easy feat when you are staring down a big bag of chips, popcorn, and enough gummy bears in all different colors to satisfy every sweet tooth out there.


I looked thru all of those bags near the register in search of one that had healthy fats or at least something that wasn’t full of sugar. Just when I was thinking I was out of luck, I saw a great snack. I found a delicious bag of protein bombs as I call them. By the time I got to the car they were open and I must say they were pretty good!

When I went back the next time, I couldn’t find anything similar. I went to several shops searching for them. They were that good. Now I was on a mission to find another bag. No such luck!

That is when I decided I was going to get out my chia seeds and come up with my own almond butter protein energy balls recipe. Before I began, however, I search and scoured several energy ball recipes online.


Are protein balls healthy for you?

Protein balls are a great source of omega-3s! While they are super satisfying and filling they are not what I would call a low-calorie snack but are filled with healthy fats.

Is almond butter a good source of protein?


Let’s get this out there in the open! I love almond butter.

Plus, it’s a super alternative for those with peanut allergies and only 2 tablespoons contains 6 grams of protein!

So yes! It’s really good for you!


Healthy protein options


Many of the recipes I found used hemp seeds, almond milk, dried cranberries, or whey protein powder. While these are all great options to add, I wanted an easy recipe for small balls, not bars, and without using different protein powders or cocoa butter.

Most keto diet recipes of this sort call for using a food processor or cocoa powder. What I came up with for my protein ball recipe is much easier and uses simple ingredients you probably already have in your home and uses only one mixing bowl. Oh, and a wooden spoon!

This recipe from The Spruce Eats uses peanut butter and vanilla extract. Another great option.

Add all ingredients to your mixing bowl and stir with wooden spoon

First, it’s best to gather your ingredients making sure they are at room temperature.

  • large bowl
  • airtight container
  • oats
  • almond butter
  • chocolate chips
  • flax seeds
  • raw honey or maple syrup
  • sunflower seeds
  • chia seeds

How to make almond butter protein balls?


Instructions


In a large mixing bowl, add the oats, and equal amounts of almond butter, or natural peanut butter. Next, I added the flax seeds, sunflower seeds, and chia seeds. Following that pour in your honey or maple syrup.

What I love about using basic ingredients are the wonderful flavor options you can use that give you the best options for your personal taste and palette.

Lastly, add a cup of chocolate chips. I love dark chocolate but didn’t have any dark chocolate chips so regular chips had to do.

Using a baking sheet, line the pan with parchment paper, and place the dough balls on top, separating them a little bit.

Store in an airtight container for up to 1 week.
