These Gingerbread cookies are so soft and chewy! I love having gingerbread cookies during the holidays. They always make me feel warm and cozy. This recipe is so easy to make. You can whip these cookies up in 30 minutes or less, and before you know if you have these soft chewy cookies that you can’t put down. The combination of the ginger, cinnamon, and molasses gives you those christmas flavors we all love. While giving you a warm and cozy holiday feeling. They are also wonderful as holiday gifts or favors. Just bake up a few dozen, and put them in some holiday tins with some decorative gift tissue paper and you’re all set! Ingredients

  • 1 stick Unsalted Butter softened 113 g
  • 1/3 c Sugar 77 g
  • 1/3 c Brown Sugar 80 g
  • 1 Egg Large
  • 1/2 t Vanilla Extract 2 g
  • 1-1/2 T Molasses 27 g
  • 1/4 t Salt 2 g
  • 1 t Baking Soda 5 g
  • 1/4 t Nutmeg 1 g
  • 1/4 t Allspice 1 g
  • 1/2 t Ginger 1 g
  • 1 t Cinnamon 2 g
  • 1-1/4 c Allpurpose Flour 196 g
Instructions

Pre heat your oven to 350 degrees.
In your mixing bowl combine the brown sugar, sugar, and softened butter. Mix until well combined and sticks to the side of the bowl.
Scrape down the sides and bottom of the bowl and mix in one egg.
Scrape the bowl again and add the vanilla extract and molasses. The mix until combined.
In a separate bowl combine the dry ingredients and mix well.
Scrape down the bowl with the cookie batter in it. Then add in the dry ingredients to the bowl and mix until you don't see anymore flour.
Portion out 12 cookies onto a lined or greased baking sheet and bake for 10-12 minutes. You want to make sure the tops of the cookies are baked. If the center looks darker than the rest bake for another minute or two. The cookies DO NOT need to be chilled.
