If you want a taste of Christmas in your baking list, these Peppermint Snowball Cookies are just for you.

From the fresh butter to the peppermint extract, and crushed candy canes-these Peppermint Snowballs will asked for every year from now on.

Peppermint Snowball Cookies


Ingredients:


1 cup unsalted, softened butter


1/2 cup confectioners’ sugar


3/4 teaspoon peppermint extract


2 cups all-purpose flour


1/4 teaspoon salt


1/4 teaspoon vanilla extract (optional)


3- 5 inch crushed candy canes or hard peppermint candy


1/2 cup confectioners’ sugar-for rolling cookies in after baked


Directions:


Mix thoroughly butter, confectioners’ sugar and peppermint extract. Blend in flour and salt. If dough is soft, cover and chill for at least an hour. (I found this to be the best results.)


While dough is chilling, unwrap candy canes or hard peppermint candy. Place in a sandwich bag and crush candy using a rolling pin or rubber mallet. Once the crushed candy is in powdered form and in tiny pieces, combine with the extra 1/2 cup confectioners’ sugar. Set aside.


Heat oven to 400*. Shape dough by teaspoons into balls. Place 1 inch apart on ungreased baking sheet.


Bake 8 to 10 minutes.


Immediately remove from baking sheet onto cooling rack. Cool for 2-3 minutes. Then roll each cookie in sugar/candy cane mixture. For an extra peppermint flavor, roll the cookies again.

Once completely cool, your cookies are ready for plating, snacking, and gift giving. I love how the flecks of candy cane really come through against the pure white confectioners’ sugar. The candy canes also add a little “crunch” to this Peppermint Snow Ball Cookie recipe.
