Chocolate Bourbon Sugar Cookies

These chocolate and bourbon-glazed sugar cookies are amazing for when you want to create something snazzy but are pressed for time! Made with Dutch process cocoa and a sweet bourbon glaze, I can never resist gussying them up with some fancy embossing and a some touches of my favourite dark metallic edible gold paint. I guess you could say they’re all dressed up but no have no place to go! These simple sugar cookies are one of my all time favourite things to make for last-minute dinner arrangements, or for whenever I’m craving something sweet -which is most of the time! Hope you guys enjoy making them as much as I do!

Ingredients
For the Sugar Cookies
  • 2 cups all-purpose flour
  • 1/4 cup Dutch process cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 3/4 cups room temperature unsalted butter
  • 3/4 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
For the Bourbon Glaze
  • 1 1/4 cups powdered sugar (sifted)
  • 2 tablespoons milk
  • 1 tablespoon bourbon of choice
Instructions
For the Sugar Cookies
Sift together flour, cocoa powder, salt, and baking powder. Set aside .
Beat together butter and granulated sugar until light and fluffy using a handheld or stand mixer with paddle attachment (will take approximately 2-3 minutes).
Beat egg and vanilla extract to butter/sugar mixture just until combined.
Add dry ingredients into the wet.
Roll out dough into a disk on a lightly floured surface. Wrap in cling-film and chill in refrigerator for approximately half an hour. While dough is chilling, line two cookie sheets with parchment paper, and preheat oven to 350 degrees Fahrenheit.
Roll dough out to approximately 1/2 inch thickness on a lightly floured surface.
Using an embossed rolling pin, roll dough out to 1/4 inch thickness.
Form cookies using cookie cutter of your choice.
Place uncooked cookies onto parchment-lined baking sheets, and chill in the refrigerator for 10 minutes.
Bake cookies in preheated oven for 10 minutes.
Place cookies on wire rack until fully cooled.
For Bourbon Glaze
Sift powdered sugar into medium-sized bowl.
Stir in milk and bourbon of choice until fully combined.
Decoration
Using a pastry brush, apply a thin layer of glaze onto each cookie.
Allow glaze to dry for 5-10 minutes.
After the glaze dries, either serve, or fill in sections of the design on each the cookie with edible gold paint of your choice!
Tips
  • If you do not have an embossed rolling pin, the same result can be achieved by rolling out the dough onto a silicone fondant mold, then gently peeling the mold off.
