Stuffed Chocolate Chip Cookies

Have you ever tasted a cookie that was literally stuffed inside another cookie? If your answer is no (as mine was BEFORE I tried this new recipe) than I'm about to change your life. Okay maybe that's dramatic, but seriously, these are mind-blowing deliciousness and decadence all rolled up (literally) into one.


I discovered these cookies while scrolling through my IG feed (via @thedomesticrebel) and knew I had to try them with my tween daughters. They were so much fun to make, provided a great opportunity for a baking dance party (even if the girls made me listen to Victorious the entire time 🤦‍♀️), PLUS I learned of a new *secret* ingredient I will be adding to my cookie dough from here on out! I get most of my ingredients from Whole Foods so instead of using the Double Stuff Oreos that the original recipe calls for, I used 365 sandwich cremes. They were awesome!

I always teach my girls to scrape the batter along the sides, to make sure everything gets mixed in evenly. (This is what my mom taught me!)

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 2¼ cups all-purpose flour
  • One (3.4 ounce box) instant dry vanilla pudding mix (just the dry mix)
  • 1 cup semi-sweet chocolate chips
  • 12-14 sandwich cookies or Oreos
Instructions

Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper and set aside.
In the bowl of a stand mixer, cream together the butter, brown sugar and white sugar until creamy and smooth, about 1 minute. Gradually add in the eggs, one at a time, followed by the vanilla. Lastly, add in the baking soda, salt, flour, and dry pudding mix until a soft dough comes together. Add in the chocolate chips.
Using a Tablespoon-size cookie dough scoop, scoop out a ball of cookie dough and gently flatten it in your palm. Place the sandwich cookie on top of the cookie dough. Scoop out another ball of dough and press it on top. Use your hands to conform the cookie dough around the cookie so no cookie is seen. Place 2-3" apart on the baking sheets.
Bake for 12-15 minutes, rotating pans halfway through baking time until cookies are golden brown and set. Cookies may appear slightly underdone; this is okay and you should not over bake! They'll continue to finish cooking on the baking sheet. Cool for about 15 minutes before serving.
