Brown Butter Chocolate Chip Cookies

Brown butter is one of my favorite adds to any recipe. It is excellent on all kinds of fish and meats, over pasta and in sweets. It imparts a super nutty flavor which gives whatever you’re adding it to an incredible depth of flavor. Some of you might be asking “What the heck is brown butter?!” Simply put, you are cooking butter over medium heat until the milk fats separate out and turn a golden, brown color. Ingredients

  • 1 cup plus 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 stick unsalted butter, browned
  • ½ cup dark brown sugar
  • ¼ cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 5 ounces bittersweet chocolate chip
Instructions

Preheat oven to 350ºF.
Line 3 sheet trays with parchment paper.
In a small bowl, whisk together flour, baking soda and salt. Set aside.
In the bowl of a stand mixer, cream together brown butter, brown sugar and granulated sugar. Add egg and vanilla. Mix well.
Add flour mixture all at once and mix until just combined. Fold in chocolate chips.
Drop by 2-tablespoons full onto the sheet trays (only drop 6 cookies per sheet tray).
Bake for 7 minutes. Remove from the oven and slam each sheet tray on the counter a couple of times, flattening the cookies out. Return to oven. Repeat again after 4 mins. Pop back in the oven for 1-2 more minutes.
Remove from the oven and slam sheet trays one last time. Let cool on cookie sheet for a few minutes. Transfer to a cooling rack and let cool completely.
