This oatmeal can be made vegan/dairy-free!

These baked oats make the perfect breakfast and can be prepped days in advance. Made with healthy ingredients but the end result is so decadent!

Ingredients in Brownie Baked Oatmeal

I decided to use one of my favorite protein powder from Happy Way AU.

You will need oats, cocoa powder, salt, baking powder and your favorite brand of chocolate chips.

You will also need coconut milk, vanilla, honey and peanut butter. Use maple syrup if you want to make this vegan.

Finally, you'll need 1 egg. If you want to make this vegan you can use a flax egg. Works exactly the same!

You can also add nuts of your choice or dried fruit into the mix.

  • 2 cups coconut milk
  • 1/2 cup honey melted
  • 1/3 cup smooth peanut butter
  • 1 teaspoon vanilla
  • 1 egg
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1 scoop chocolate hazelnut protein powder (optional) I used Happy Way's protein powder
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 cup chocolate chips

Preheat the oven to 180 degrees C / 350 degrees F.
In a mixing bowl, add the coconut milk, honey, peanut butter, vanilla and egg and whisk together until combined.
Add in the oats, cocoa powder, baking powder and protein powder if using then mix together.
Mix in the chocolate chips.
Pour the batter into the tin, top with more chocolate chips and bake for 35 - 40 minutes.
