Peanut Butter S'mores Bars

The other day I asked my husband "what should I bake this weekend?". His answer was not, surprisingly, Cinnamon Buns. Instead it was "I don't know... let's Google 'dessert' and you can make the first thing that comes up.". If that sounds like a fun game, I hate to break it to you, but unfortunately it's not. I was saying things from "I don't even know what that is" to "I don't have enough time to make that!", and before we knew it, 'the first thing that came up on Google' slowly turned into the 30th thing and we I still hadn't agreed to one. In the end we settled on something s'mores flavored, and if I'm being completely honest, I don't even know how that happened. I guess I was just so desperate to just have an idea of what to make that I forgot about the fact that I don't really like marshmallows.



I had promised a s'mores dessert, so a s'mores dessert is what I'd make. But then came the question of what type of dessert was I going to subject to a s'mores makeover? Cookies? Ice-Cream? Cheesecake? Cake? Brownies? In the end, I ended up opting for a fudgy bar dessert. I thought I'd have the best chance at enjoying it if the marshmallows were contained to one layer of the dessert. 

I was right! To my surprise, I really enjoyed this dessert, marshmallows and all! It is so, so good. The peanuts and peanut butter are such a great flavor to add to the classic s'mores ingredients. It also is quick, easy, and fun to make! No campfire, no problem - these bars are tastier than the originals. These would also make a wonderful dessert to bring to a gathering, they're so tasty and they serve well. They are also really pretty with the toasty marshmallow and chocolate drizzle on top.

Making these is seriously so easy. First you make the crust, and pack it down tightly into your pan. I used a drinking glass to pack mine down. Then while the crust is baking combine your filling ingredients in a saucepan and melt everything together. When the crust is done baking, pour your chocolate peanut butter filling on top, add marshmallows and broil for about 2 min until the marshmallows are golden on top. Throw some graham crackers, peanuts, and chocolate drizzle on top and you're all set! Pop them in the fridge to firm up and then when you're ready to serve they can be eaten cold, room temperature, or warmed up!

Warm or cold, these bars are sure to be a hit with family and friends. A little goes a long way with these, so you could easily get 20 bars from the pan. Not saying 20 bars would feed 20 people though... It is way too easy to go back for seconds!

Ingredients
For the Crust:
  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup lightly packed brown sugar
  • 3/4 cup butter, melted
For the Filling:
  • 1 cup milk chocolate chips
  • 1/2 cup semisweet chocolate chips
  • 1 can sweetened condensed milk
  • 1/4 cup butter
  • 1/2 cup peanut butter
  • 1/2 teaspoon vanilla extract
For the Toppings:
  • 18 large marshmallows, ripped into pieces
  • 1/2 cup salted peanuts
  • 4 graham crackers, broken into pieces
  • 1/4 cup semisweet chocolate chips, melted
Instructions

Preheat oven to 350 F, grease a 9x13 pan
Combine the graham crumbs, brown sugar, and butter for the crust in a bowl, and mix until thoroughly combined
Press the graham mixture firmly into prepared pan, bake in preheated oven for 10 minutes
While the crust is baking, combine the filling ingredients in a medium pan, turn the heat to medium, and stir until everything has melted and a smooth mixture is formed
Remove filling from heat, pour into baked crust
Scatter the marshmallows on top of the filling, then broil for 2-3 minutes, or until the marshmallows are melted and golden brown
Toss the peanuts and crushed graham cracker on top of the marshmallows, drizzle chocolate over top
Allow to cool in fridge 1-2 hours before serving
Tips
  • You can sub 1 cup of mini marshmallows for ripped large ones
  • To melt chocolate chips, microwave for 30 seconds at a time, stirring after each time until chocolate is completely smooth
