Homemade raisin farmer cheese The farmer cheese is an easy and an affordable cheese you can make it yourself at home. It doesn’t need any science or super skills to make it. All what you need is milk and vinegar or lemon juice and the will to make it, just kidding!. But, yeah! When you hear homemade cheese you get intimidated by the title, but believe me its as easy as drinking water. In addition, you have made your very own cheese. It’s sounds like you have a farm and you’re making your own products just like the very old days. When i make this cheese i like to add some soaked raisin in it. This is a perfect natural sweetener, perfect for a hearty breakfast with some yummy fresh baked bread emmm just heaven. This recipe is originally from Poland, i use to eat it when i was studying in Russia. Slavic nations like it so much and they call it TVAROG . They eat it mixed with some raisin, salty or just plain. Ones you make this cheese, it’s better to consume it within one week it doesn’t age good. Otherwise use it in your baking it melt well too.


Yields: 1 pound Prep time: 5 minutes Cook time: 20 minutes Total time: 25 minutes


Ingredients:

  • 1 gallon whole milk
  • 1 large lemon juiced
  • Pinch of salt
  • 1/2 cup soaked raisin (optional)



How to make it:

  1. In a large pot, pour the milk and add a pinch of salt then bring to a boil over a medium heat.

Stir occasionally to prevent the milk of scorching in the bottom of the pot.

2. When the milk start to boil its when you start to see small bubbles in the sides of the pot. Turn off the heat and add into it the lemon juice. Stir a bit to form the curds and leave it for about 10 to 15 minutes to completely turns in curds.


3. Place a cheesecloth in a colander and pour the milk though the cloth to catch the curds. What left called the whey. Gather the cheese cloth by the sides around the cheese and try to squeeze out as much as the whey you can.

4. You have made your farmer cheese, so now store it in a container and place it in the refrigerator. If like me you like the raisin in it. Soak half a cup of raisin in water and mix with the cheese.

Tips
  • Adjust the salt or sugar as desired, add nuts or other fruit to the cheese if you would like but i suggest to add it in the time of consumption of the cheese so it not turns bad faster.
