Now that I’m older, I often think back to how magical my Grandma made each and every holiday for me. Even holidays like St. Patrick’s Day that aren’t always so widely celebrated, she would have some kind of little candies or treats to make the day special.

I have so many heartwarming memories from childhood thanks to my Gram’s thoughtfulness. Quick and easy candy recipes like this one let me conjure up that childhood happiness that I wish I would have soaked in more now that I miss her so very much!

Rainbow Chocolate Bark Recipe Directions


Step One: Gather the Materials

To begin, gather a baking sheet, parchment paper, resealable sandwich bags, and the candy melts.

Step Two: Prep

Prepare your baking sheet by lining it with parchment paper. Set it aside.

Step Three: Divide

Divide the candy melts into separate resealable sandwich bags, leaving them open for now.

Step Four: Melt

Place all bags into the microwave and microwave on 50% power for 60 seconds. Knead each bag, then repeat the process until the candy melts are fully melted and smooth. If some colors seem to melt quicker than others, you can microwave them for an additional 30 seconds at 50% power.

Step Five: Create

Once the candy melts are fully melted, seal each bag shut and snip the tip of one color. Add dollops of melted candy in random places on the prepared baking sheet. Repeat until all bags are empty and all colors are on the baking sheet.

Drag a knife into the melted candy to swirl and spiral the colors. Add your desired toppings such as rainbow jimmies, candy stars, and silver sequins.

Step Six: Cool and Harden

Allow the candy to stand for an hour to harden or refrigerate for 15 minutes.

Once hardened, score the candy bark with a sharp knife and break it into pieces.

Ingredients

  • 1/2 heaping cup bright pink candy melts
  • 1/2 heaping cup yellow candy melts
  • 1/2 heaping cup vibrant green candy melts
  • 1/2 heaping cup royal blue candy melts

Instructions

Cover a baking sheet with parchment paper and set aside.
Place each color of candy melts into a separate resealable sandwich bag, but do not seal shut. Place all bags into the microwave and microwave on 50% power for 60 seconds. When cooking is complete, knead each bag. Return to the microwave, heating at 50% power for 60 seconds and kneading until smooth.
Some of my colors seemed to melt quicker than others and I'm not sure why. If your candy melts just need a little more, place them into the microwave for 30 seconds at 50% power.
Seal each bag shut and snip the tip of one color and add dollops onto the prepared baking sheet in random places. Repeat until all bags are empty and all colors are on the baking sheet. Drag a knife into the melted candy to swirl and spiral the colors. Sprinkle with rainbow jimmies, candy stars, and silver sequins.
Let stand for an hour to harden or refrigerate for 15 minutes until hard.
Score the candy bark with a sharp knife and break apart. Serve immediately or cover and store at room temperature.
