Have you ever had to serve breakfast to a crowd, and instead of enjoying the festivities you find yourself standing by the stove the entire time flipping pancakes?

I’m happy to share this delicious recipe for great make ahead pancakes that taste as delicious as they look.

This recipe couldn’t be any easier as it uses box pancake mix and can be whipped up in a matter of minutes. The addition of fruit to the bottom of the muffin tin ensures that the pancakes stay fluffy and moist as they bake in the oven.

You can easily make 24 of these little cakes at once, therefore leaving you with plenty of time to sit and enjoy the meal with your guests.

Begin by preheating the oven to 350. Generously grease a muffin tin with butter. I highly recommend skipping the non stick spray for this recipe and using the good stuff. Real butter will help give these little cakes that traditional pancake flavor.

Once the pan has been well greased place a single layer of fresh berries on the bottom. This time I chose chopped strawberries and blueberries.

Next mix the pancake batter according to the box directions. For reference I used 1 1/4 cup pancake mix, 1 cup milk and 1 egg.

Pour the batter into the muffin tin and bake for 13-15 minutes. Let cool for several minutes before removing them from the tray.

Flip the little cakes upside down onto a plate and drizzle with maple syrup. These little upside down pancakes look so beautiful and much more impressive that plain pancakes in my opinion.

Of course you could always mix the berries into the batter before baking, but I just love how these little cakes look when the fruit is all at the top.

These cakes taste great at room temperature, so they are perfect to set out for a brunch buffet.

Ingredients

  • 1 1/4 cup buttermilk pancake mix
  • 1 cup milk
  • 1egg
  • 1 cup chopped fresh strawberries
  • 1/2 cup fresh blueberries
  • butter
Instructions

Preheat oven to 350.
Wash and cut the fresh berries.
Generously grease a muffin tin with butter.
Arrange the fresh fruit evenly in a single layer at the bottom of each muffin cup.
Mix the pancake mix according to the package directions.
Pour the batter into the muffin tin and bake in the oven for 13-15 minutes.
Remove from oven and let cool before serving.
** serve with a drizzle of maple syrup
