Orange Loaf

With the beginning of spring marks all things citrus! Lemon tarts, key lime pies, and orange cakes! This orange loaf is so light and has the perfect amount of orange flavor. The cake itself is actually nothing like a typical pound loaf because its not dense at all, it's spongy and airy making for the perfect spring dessert to have with tea or coffee. This cake is sure to be a ray of sunshine in your day as it cheers you up with just the taste of it. I like to top it off with powdered sugar but you could top it off with icing or fresh orange slices. Enjoy!

Ingredients

  • 2 1/2 cup of flour
  • 3/4 tsp baking powder
  • 3 whole eggs
  • 1 egg yolk
  • 1 cup orange juice, freshly squeezed
  • 3/4 cup vegetable oil
  • 1/4 tsp salt
  • Zest from a medium orange
  • 1 1/3 cup granulated sugar
Instructions

Preheat oven to 350°F and grease your 9-inch loaf pan.
In a medium bowl, combine the flour and baking powder and salt. Set aside.
Using a hand mixer on medium speed in a separate medium bowl, whip the eggs and sugar together until light and fluffy.
With the hand mixer on low speed, add oil and combine. Add the orange juice and orange zest and continue mixing.
Add the dry ingredients to the bowl of wet ingredients and mix until just combined
Pour the batter into the pan and bake for 50 minutes to an hour. Remove from oven when a toothpick inserted comes out clean
Let the cake cool and sift powdered sugar over the cake to top.
