I have been binge watching Martha Stewart on YouTube. I had never watched a single Martha anything up until a couple of weeks ago…when the time changed and it became dark by 4pm here in Wisconsin. I was so cold and feeling so “ughhhh” about it being so dark so early. So I made myself feel better by snuggling up in my bed and turning on the TV. I happened upon a Martha Stewart show that recently aired during covid.

Since then, I have become an addict and have been watching so many of her ‘Martha Bakes’ episodes on YouTube. My husband and kids have been making fun of me for it, but seriously, she’s truly an awesome teacher! I love that she tackles what appears to be hard recipes and then makes them look so easy to make…all while sharing the most interesting facts about the ingredients or the origin of the recipe (I’m a geek like that and looooove to know these kind of weird facts!)

Anyway, I watched an episode where she made a plum galette. Which, before the episode I would have never known what a “galette” was. I would have just called it a tart. And ironically, I have a delicious homemade plum cream cheese tart recipe and homemade plum pie recipe (ohh and, homemade fresh purple plum pie recipe! haha, I love plums!) on my blog already! But, after watching her bake, I had a burning desire to bake my very own galette, with apples and raisins!

Earlier this year, in the fall, we went apple picking and picked a ton of fresh apples in several different varieties. While I’m terrible at using them all up at once, I like to make up batches of my apple pie filling from my all-American apple pie recipe and can them to use later.

This year, I made a few batches of apple pie and put the Mason jars in the freezer, which worked out perfect because I just pulled 2 regular sized jars out of the freezer and let them defrost for this recipe!

What Is A Galette?

A galette is basically a rustic version of a homemade pie crust. It’s made very similarly to a pie crust, but it doesn’t have to look beautiful. Galettes are often times referred to as an easy way to learn how to make real pie crusts. Galettes originated in France.

  1. Prepare apple filling

Fold doughCarefully fold up the edge of the dough, making pleats to secure filling. Wrap in plastic wrap and refrigerate for at least 1 hour before baking.

BakePlace chilled galette on a parchment lined baking sheet. Bake at 350°F for 40 minutes

Pro Tip: As Martha says, “make it cold, bake in hot”. When you are baking pastries or items that use a pie crust, you want to make sure that the dough is very cold before putting it in the oven. Be sure to properly chill your dough before baking.

I have definitely found a new favorite recipe that I will most definitely make often! Think of all of the possibilities of fillings you could create for the inside of this galette? Oh my goodness! My stomach is getting hungry just thinking about it!

I’m so serious when I say this crust was AMAZING!!! I couldn’t stop complimenting myself (haha, I’m such a humble person) when I was eating a huge slice of this galette! The corn meal added such a delicious, slightly sweet taste that was so unlike a regular pie crust.

Recipe details

Ingredients

  • 1 c all-purpose flour
  • 1/4 c corn meal
  • 1/2 tsp salt coarse Kosher salt
  • 1 tbs granulated sugar
  • 1 stick butter
  • 1 egg yolk
  • 2 tbs iced water
  • 1 egg + water for brushing on top of the crust
  • 2 8oz jars apple pie filling
  • 1 tbs corn starch
Instructions
Galette Crust
Using a food processor, pulse the dry ingredients for the galette crust a couple of times
Add the butter and pulse again until combined to an oatmeal like consistency
Add in egg and water and pulse again a couple of times
Wrap dough in plastic wrap and refrigerate for a minimum of 2 hours
Pie Filling
Toss two 8oz jars of apple pie filling with 1 tbs corn starch (this will help absorb some of the excess juice when the apples bake)
Making The Galette
Preheat oven to 350°F
On a lightly floured surface, roll out the galette crust to about 1/4" thickness
Spoon apple filling in the center of the galette
Carefully fold up the edge of the dough, making pleats to secure filling. Wrap in plastic wrap and refrigerate for at least 1 hour before baking.
Place chilled galette on a parchment lined baking sheet. Bake at 350°F for 40 minutes
Let rest about 20 minutes before cutting and serving
