Let's enjoy these pretty in pink banana oatmeal pancakes any day of the week. What is your favorite dish for breakfast ?


In my house, my kids love pancakes for breakfast. On the weekends, I usually make pancakes or waffles for breakfast (always make extra to store in the fridge and enjoy during the week without all the clean up. )


This pancake batter is fluffy and tasty, that you won't believe it is made out of oats. I sometimes like to sneak in some chia and hemps seed to add extra nutrient and protein. I used the dragon fruit puree to add a pop of pink color and extra flavor. You may add your favorite toppings like strawberries, blueberreis and a drizzle or organic maple syrup.


For this recipe, I used simple ingredient that you have in your pantry and fridge.

Ingredients

  • Pink Banana Oatmeal Pancakes
  • 1 1/4 of quick oats
  • 1 small ripe banana
  • 1 egg
  • 1/2 cup of water
  • 1 TBSP of maple syrup
  • 1 TBSP of Coconut oil or melted butter
  • 1 tsp of baking powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp of salt
  • 1/2 tsp of dragon fruit puree to add color
Instructions

In a blender, combine all of the ingredients. Blend until desired smooth consistency about 2 minutes, and set aside.
In a hot skillet or griddle, (medium heat)drizzle a little of coconut oil or butter and pour the batter ( you may use the 1/4 measuring cup to scoop and pour and assure equal amounts of batter)
Cook for about 2 minutes each side or until you see tiny wholes in the batter, this means it is ready to flip and cook the other side. If you see you pancakes browning too fast, you may want to lower the heat.
Serving suggestions: Drizzle maple syrup, fresh fruits and nuts. Extra tip: I added a few chips of dark chocolate to the pancakes while cooking for extra layer of flavor and richness)
Tips
  • I like to add 1 tsp of chia and or hemp seeds to the batter fo extra load of nutrients and added protein.
  • You may store in the fridge, in an air tight container for about 3 days.
