Peanut Butter Whiskey + Bacon Pancakes With a Boozy Syrup
Yup, that’s right whiskey and bacon are IN the pancakes and also ON TOP. I am a huge fan of both and also love a good stack of pancakes (I think it’s one of the prettiest foods to take pictures of). So I decided, one Saturday, to throw them all together. I chose peanut butter whiskey because peanut butter pancakes are classic, so I thought the flavors would be great. I chose peppered, thick cut bacon because it’s hands down the best bacon I’ve ever had. And for the boozy syrup, I wanted one more element of favorite flavor combos, so I added a little bit of chocolate liqueur. We all know that chocolate and peanut butter are one of the best flavor combos of all time, but have you ever had chocolate and bacon? It’s seriously divine. Peanut Butter Whiskey + Bacon Pancakes With a Boozy Syrup

Ingredients
The Pancakes
- 1 box of buttermilk pancake mix (+ whatever the box requires you to add to the mix)
- 1 lb of peppered, thick cut bacon
- 2 tbsp of peanut butter whiskey + more to taste
- -Butter, optional
The Boozy Syrup
- 12 oz of syrup
- 1 tbsp of chocolate liqueur
- 2 tbsp of peanut butter whiskey
Instructions
For the Pancakes
- Prepare pancake batter as instructed on box (for the 24-36 pancake option) + add a tbsp of whiskey at a time to the batter to taste
- Cook bacon to your desired crispiness
- Reserve 1/3 of the bacon for toppings and finely chop the other 2/3
- Following the cooking instruction on the boxed mix, pour about 1/4 cup of batter onto a heated pan or griddle + sprinkle a pinch of chopped bacon into the batter and cook accordingly.
- Turn your oven to lowest setting, or warm, and put finished pancakes on a plate in the oven to keep warm while you cook the rest of the stack.
For the Boozy Syrup
- In a small sauce pan, add syrup, whiskey, and liqueur. Bring to a boil for 3 minutes, stirring occasionally. Reduce heat to low to keep warm
- You can cut down the recipe easily if you don't need a giant stack like I photographed. Base it off the instructions on the back of the box for how much batter to prepare.
Assembly
- Stack your pancakes, layer with reserved bacon, top with butter, drizzle with syrup, and enjoy!
Tips
- When adding the peanut butter whiskey to the pancake batter to taste, add it in one tbsp at a time until you can smell it in the batter when you hold it up to your nose.
- You can cut down the recipe easily if you don't need a giant stack like I photographed. Base it off the instructions on the back of the box for how much batter to prepare.
