For several years now, our family has made breakfast together on either Saturday or Sunday morning.  


Our go-to for the last several years has been my homemade french toast recipe with fresh fruit, but since discovering the Magnolia Table cookbook we have landed on a new favorite. 


Joanna’s “Best-Ever Fluffy Pancakes.” 


After tailoring it to suit the ingredients I always have stocked in my fridge, I would have to say these are the best pancakes I have ever had.


The primary difference is that she includes buttermilk. I don’t typically keep buttermilk stocked in my fridge on a regular basis. I do, however, always have lemon juice and milk. 


We made this recipe several times with buttermilk and many, many times since with my substitutions and they taste the same – amazing and delicious every time.


The other key is to let the mixture stand for 20 minutes as the instructions say. This allows it to thicken creating fluffier pancakes.


I am telling you. These pancakes are absolutely the best. 


This month pick a weekend, get your kids to help mix the ingredients, set the table, write a list of 5 questions that each person has to answer, and enjoy The Best Pancakes.

Ingredients

  • 2 cups white flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tbsp lemon juice
  • 1 3/4 c 1% milk (or dairy free substitute)
  • 1 stick butter
  • 2 eggs
Instructions

Mix the ingredients lightly and let stand for 20 minutes.
Once thickened pour ¼ c batter onto generously buttered griddle at 325F.
Flip once bubbles appear.
Freezing Instructions
Prepare as directed above. Wrap short stacks of pancakes tightly with plastic wrap and then aluminum foil. Freeze. Reheat in microwave when ready to serve.
