Banana and Almond Pancakes

Porridge has been my go to breakfast on these cold winter mornings, but even the most devoted porridge lover can start to seek a little variety… So say ‘Good Morning’ to my Banana and Almond Pancakes - declared by my boyfriend as ‘the best thing you make’! I’ve got to be honest, they are pretty damn delicious.


I love a traditional pancake - but they often make me feel a little sluggish and in need of post-pancake nap. My recipe only contains a small amount of flour - relative to most recipes, but doesn’t at all comprise on delivering a fluffy, pillowy pancake - thanks to the addition of baking powder.

Also contributing to the fluffy light texture is the Greek yoghurt. If you’re like me, I never have buttermilk in the fridge, but there is always a tub of highly versatile plain Greek yoghurt. Did you know that Greek yoghurt is a perfect substitute for buttermilk? If not, well now you do too.


And if you’re wondering what to do with the overripe, spotty bananas in your fruit bowl then this recipe is ideal for combating food waste. Both the bananas and vanilla extract provide all the natural sweetness you need - without the addition of any refined sugar.

Ingredients

  • 2 medium bananas
  • 1 egg
  • 1 cup plain Greek yoghurt
  • 1/2 cup self raising flour
  • 1/4 cup ground almonds
  • 1/2 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon butter
Instructions

While you create the mixture, heat a large fry pan on a medium heat, and gently melt the butter.
Mash the bananas in a bowl and set them to the side while you combine all the other ingredients in a large mixing bowl. Whisk well until the batter is smooth and thick.
Fold the bananas into the batter and give it a thorough mix.
Evenly spoon the mixture into the pre-heated fry pan (the batter makes 6 pancakes).
Spatular at the ready! Flip your pancakes after approx. 4-5 minutes when little bubbles start to develop around the edges (you can also do a sneaky check to see if they’re nice and golden before you commit to the flip).
Once flipped, fry the second side for approx. 4-5 minutes.
Serve while hot, with your choice of toppings!
