This strawberry mug cake is sweet, fluffy, and fruity and is a yummy treat for any time of the day. It’s like a single serving strawberry muffin, and only takes 2 minutes to make. With juicy fresh berries, you can have this strawberry cake in a mug for breakfast, or top it with whipped cream for an after dinner dessert!

Strawberry Mug Cake Recipe


Years ago when I first started gardening, I knew I wanted to plant things I could eat. 🙂

Flowers are great and all, but I wanted a mainly edible garden.

The first plant that broke soil in my backyard garden was a wild strawberry plant.

It was gifted to me from the manager of a store I used to sell to when I had my organic bakery.

It took a couple years of it not doing much before it started yielding a good amount of fruit.

(Side note: these are awesome for keeping your strawberries off the ground and preventing that gorgeous fruit from rotting.)

Every June my daughter and I pick tiny strawberries that are no bigger than a thumb nail.

Their small size packs a huge concentrated strawberry flavor, and it’s such a treat to pick them straight from the plant, and eat them while they are still warm from the sun.

For now, since it’s not strawberry season here, I’ll use store-bought strawberries for this mug cake.

But come June, I can’t wait to try this strawberry mug cake with fresh-from-the-garden wild strawberries!

This mug cake is filled with berries, and is sweet and fluffy.

You can add whipped cream to the top if you want, but it’s SO good as is. It’s like a fresh, warm strawberry muffin in a mug!

Strawberry Mug Cake Ingredients

Here is what you need to make your new favorite strawberry dessert!


  • regular flour or whole wheat flour, or gluten-free all-purpose flour mix


  • granulated sugar: white, coconut sugar, erythritol, etc.


  • butter or oil (or coconut oil, any oil works, or vegan butter)


  • milk, any kind you have in your fridge


  • baking powder


  • vanilla extract


  • chopped strawberries

A Few Different Strawberry Mug Cake Options:

Vegan Strawberry Mug Cake – This recipe is already egg-free, so to make it vegan, use any kind of dairy-free milk, and use oil or vegan butter for the butter.

Chocolate Strawberry Mug Cake – Add a handful of chocolate chips to the batter before microwaving, or add some shaved chocolate to the top (or even a chocolate drizzle!)

Healthy Strawberry Mug Cake – Substitute applesauce for the butter, use monk fruit for the sweetener. You can also reduce the sugar in this recipe by using just 1 tablespoon of sweetener (I prefer this amount myself).

Ingredients

  • 4 tbsp regular flour or whole wheat flour, or gluten-free all-purpose flour mix
  • 2 tbsp sugar any granulated sugar, white, coconut sugar, erythritol, etc
  • 1 ½ tbsp melted butter or oil (or coconut oil, any oil works) (or vegan butter)
  • 3 tbsp milk, any kind
  • ½ tsp baking powder
  • ¼ tsp vanilla extract
  • ¼ cup chopped fresh strawberries
Instructions

Mix flour, sugar, and baking powder right into the mug you're using.
Add the milk, vanilla extract, and melted butter or oil.
Stir in the chopped strawberries.
Microwave on high for 90 seconds; if it needs more time, add 15 seconds at a time until fully cooked.
Top with whipped cream and extra strawberries if you want, or enjoy as is!
