If you want to pick some up, I always have this almond flour in my kitchen. (Do it! It’s delicious and high-protein and will change your baking life foreverrrrr.)

Cinnamon Cake Tips and Tricks


This mug cake recipe is already gluten-free so we don’t need to make any modifications for the gf folks.

There is no great substitute for almond flour, because it is a kind of magical ingredient and behaves in its own way in baking.

You can add nuts, chocolate chips, etc. or sprinkle a cinnamon sugar mixture over the top of the mug cake (before microwaving it).

Since microwaves and mug sizes vary, you’ll have to see what exact time works best for your microwave.

Start by microwaving the cinnamon mug cake for 1 minute, and then add 15 second intervals until done if it needs more time. It took my microwave 90 seconds to cook this perfectly.

To make this mug cake keto-friendly, there is only one main thing to make note of.

For the granulated sugar, choose a keto sweetener like erythritol or monk fruit.

Ingredients

  • 4 tbsp almond flour
  • 1 tbsp melted butter
  • 2 tbsp granulated sugar (brown sugar, erythritol, monk fruit, white sugar)
  • 1 egg
  • 1 tablespoon heavy cream
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • Optional: 1-2 tablespoons pecan pieces
Instructions

Stir the sugar into the melted butter in a bowl (or right into your mug).
Mix in the almond flour and cinnamon.
Crack the egg in and mix it in.
Stir in the cream.
Add the baking powder and stir.
Microwave on high for 1 minute; add 15 seconds at a time if it needs more time to be fully cooked.
Top with cinnamon sugar, pecans, whipped cream, or enjoy as is!
