Cinnamon mug cake with pecan

There is no great substitute for almond flour, because it is a kind of magical ingredient and behaves in its own way in baking.

You can add nuts, chocolate chips, etc. or sprinkle a cinnamon sugar mixture over the top of the mug cake (before microwaving it).

Since microwaves and mug sizes vary, you’ll have to see what exact time works best for your microwave.

Start by microwaving the cinnamon mug cake for 1 minute, and then add 15 second intervals until done if it needs more time. It took my microwave 90 seconds to cook this perfectly.

Keto Cinnamon Mug Cake

To make this mug cake keto-friendly, there is only one main thing to make note of.

For the granulated sugar, choose a keto sweetener like erythritol or monk fruit.

I don’t find that mug cakes made with almond flour taste great or rise well without an egg.

So…if you want a cinnamon mug cake with no egg, I would recommend this yummy chai spice mug cake. It’s egg-free and cinnamon-y, and has a gluten-free option if you need that choice. Instead of the chai spices, you can use ¼ teaspoon of cinnamon.
