I recently did an Instagram collaboration with Pillivuyt where I had a chance to work with products from their Teck collection! These adorable, porcelain tumblers come in a set of four and are super versatile. Great for cold or hot beverages like your morning coffee or even individually portioned desserts, making them perfect for my microwave mug cake! This is one of my simpler, no-fuss recipes because, sometimes, I just want a quick, sweet treat. This chocolatey mug cake is moist, rich and whipped up in minutes. You can keep it simple or level it up with a variety of add-ins like nuts or your favorite chips (chocolate, peanut butter, toffee, etc.). Serve it with fresh whipped cream and enjoy!

Ingredients
CAKE
  • 2 tablespoons | Unsalted Butter
  • ¼ cup | Whole Milk
  • ¼ teaspoon | Instant Coffee
  • ¼ cup | All-purpose Flour
  • 2 tablespoons | Unsweetened Cocoa Powder
  • 3 tablespoons | Granulated Sugar
  • ¼ teaspoon | Baking Powder
  • A pinch | Kosher Salt
  • ¼ teaspoon | Vanilla Extract
  • 3 tablespoons | Chocolate Chips
Instructions

Add butter and milk to microwave safe bowl. Microwave in 30-second increments until butter is melted. Add instant coffee and mix to dissolve. Set aside.
Mix flour, cocoa powder, sugar, baking powder and salt in a small bowl. Add wet mixture and vanilla extract and mix until well combined. Add 2 tablespoons of chocolate chips and mix to combine.
Pour into coffee mug. Top with tablespoon of chocolate chips and microwave for 90 seconds.
Let slightly cool and eat as is or top with ice cream or whipped cream.
