Learn how to make Starbucks blueberry muffins at home with this easy copycat recipe. It is light and fluffy with a streusel topping just like the real thing.

I added an extra egg to make these muffins moist. I also use both butter and oil. The butter makes them yummy, and the oil makes them moist.
These blueberry muffins freeze really well. Let them cool and then freeze them on a cookie sheet. Then place in a freezer bag and freeze up to 2 months. I like to use these reusable freezer bags for baked goods.

Ingredients
Streusel Topping
- 3 tablespoons melted butterÂ
- 2Â teaspoons lemon zestÂ
- 3 tablespoons sugarÂ
- 1/2 cup flour
Muffin Batter
- 2 eggs
- 2½ cup flour
- 1 cup sugar
- 2 teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup milk or buttermilk
- 3 teaspoons melted butter
- 1/4 cup vegetable oil
- 2 cups blueberries (fresh or frozen)
Instructions
- Preheat the oven to 425 degrees Fahrenheit.
- To make the streusel topping, melt the butter. Add sugar, lemon zest, and flour. Set aside.
- To make the batter, combine melted butter, oil, eggs, and milk in a small bowl.
- Sift the flour. Combine sifted flour, baking powder, baking soda, and sugar. Add to the liquid mixture and stir until just combined.
- Prepare your muffin tins by spraying with oil or using a paper liner. Fill 1/3 full with batter.
- Add the blueberries to the batter and fold them in.
- Add the blueberry batter to the muffin cups, filling each one 2/3 cups full. Top with streusel mixture.
- Bake at 425 degrees Fahrenheit for 10 minutes. Then lower the temperature to 375 degrees Fahrenheit and bake for another 10 to 15 minutes.
- Your recipe for Starbucks blueberry muffins is done when a toothpick inserted into the center comes out with just a few crumbs on it. The top will spring back when pressed on. Do not overbake

Sounds yummy. I am looking forward to trying these! And 3 teaspoons is equal to 1 tablespoon, which is an easier measurement, especially for butter, since most butter wrappers have tablespoons marked on them.
I didn't like these at all.
