The season is here for oranges...I love a good cranberry orange muffin. Something about the fresh citrusy flavor, makes you think of spring. Which is coming very soon!

The oils from the orange zest adds a citrus note when you go for each bite. These muffins in particular I made to enjoy as a healthier treat or pre workout snack. It's made with almond and oat flour plus coconut oil as a replacement for butter. In addition, the sweetness is coming from honey, ONLY fresh honey. The jar of honey came from one of the farm workers, which was delivered to my dad's work. So, Yay for us! We usually have local honey stored in our pantry, or the organic Costco brand. Any of which, work just fine.

These recipe is super easy to make, I hope you enjoy them as much as I do!

  • 1 cup pulverized oats (oat flour)
  • ½ cup whole oats
  • 1 ½ cup almond flour
  • 2 tsp baking powder
  • ¼ tsp kosher salt
  • 1 tbsp chia seeds
  • 2 eggs
  • ½ cup almond milk (unsweetened or sweetened)
  • 1 large orange, zested
  • ¼ cup juice of an orange, (half orange juiced)
  • ⅓ cup honey
  • ¼ cup and 2 tbsp coconut oil, melted and cooled

Preheat your oven 350 degrees Fahrenheit and spray a 12 round muffin tray with nonstick baking spray or place with cupcake liners.
Using a medium size bowl, combine the dry ingredients: oats, almond flour, baking powder, salt, and chia seeds. Set aside.
Slightly melt the coconut oil in the microwave for about 10-15 seconds. Set aside.
In a separate bowl, whisk together the almond milk, eggs, honey, orange zest and orange juice.
Combine your dry and wet ingredients and mix in the coconut oil.
Using a medium size cookie scoop, divide the batter evenly among the prepared muffin pan
Bake for 22-24 minutes. Allow to cool. Enjoy
Tips
  • You can use maple syrup in place of honey.
  • Chia seeds are optional.
  • Place in the refrigerator to save throughout the week.
