How to make healthy strawberry muffins with fresh strawberries. This is an easy recipe that be vegan, dairy free, or egg free. You can make it with all wheat flour or use part white flour and part wheat flour.

I used fresh strawberries, but this would also be good with raspberries, blueberries, or another fruit.

This uses applesauce instead of oil. I like applesauce because it's healthier and makes for a lighter muffin. You can use refined coconut oil for the butter.

I don't usually use all wheat flour because the muffins can get dense, even with the applesauce. I recommend using both white flour and wheat flour. I prefer to use a white whole wheat flour because I think it's better for baking.

Ingredients

  • 1 cup applesauce
  • 1/2 cup melted butter
  • 1/2 cup maple syrup
  • 4 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cup white whole wheat flour or 1/2 cup white flour and 1 cup white whole wheat flour
  • 1 1/2 cup chopped fresh strawberries
Instructions

Preheat oven to 375 degrees Fahrenheit. Line a muffin pan with paper liners or spray with olive oil.
In a large bowl, combine applesauce, maple syrup, milk, eggs, and vanilla. Use a whisk to combine.
In a small bowl, combine the baking powder, baking soda, and salt. Stir to combine. Add to the applesauce mixture and stir well.
Add the flour(s) and mix until just combined. Do not overmix. Fold in the strawberries pieces.
Add 1/3 cup batter to each muffin tin. Bake for 15 to 17 minutes. Use a cake tester to ensure that the center of the muffin is cooked.
Let the muffins cool for 5 minutes then place them on a wire rack.
Tips
  • Do not use frozen berries because the water content can make these soggy.
