Yes, they do! I would place a few in the refrigerator, the night before serving these for breakfast, so they can thaw in time.

Can I use any other milk besides regular milk?

You can! You can make equal measurement substitutions for either almond milk or coconut milk.

Can I use frozen blueberries in these Blueberry Chia Muffins?

You may, but I prefer using fresh blueberries only because I find the purplish blue coloring starts to spread in the batter when the blueberries thaw.

Yes! The only difference will be a longer baking time. I like using these mini loaf pans

to share loaves with friends, or if you prefer larger loaves, this loaf pan

works great.


Any secrets to making fluffy muffins?

Shhhh! Yes!

Never overmix your batter. Mix it till it’s just combined.

And combine the ingredients by hand and not with a stand mixer or hand mixer.

Ingredients

  • 2 cups old fashioned oats
  • 1 cup fresh blueberries
  • 1 tbsp chia seeds
  • 2 eggs
  • 2/3 cup milk
  • 1/2 cup applesauce
  • 2 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp cinnamon powder
Instructions

Preheat the oven to 350 degrees Fahrenheit
In a mixing bowl, combine the old fashioned oats, chia seeds, cinnamon powder and baking powder.
In another bowl, mix the wet ingredients- eggs, maple syrup, milk and applesauce.
Once done, gradually pour the wet ingredients into the dry ingredients and combine till everything is mixed well.
Finally, carefully fold in the blueberries into the prepared batter.
Pour the batter into a greased muffin pan or silicone cupcake liners.
Bake for 18-20 minutes, or till the center is cooked all the way through.
