You can! You can make equal measurement substitutions for either almond milk or coconut milk.

You may, but I prefer using fresh blueberries only because I find the purplish blue coloring starts to spread in the batter when the blueberries thaw.

Healthy Oats and Chia Seed Muffins With Blueberries
Recipe details
Ingredients
- 2 cups old fashioned oats
- 1 cup fresh blueberries
- 1 tbsp chia seeds
- 2 eggs
- 2/3 cup milk
- 1/2 cup applesauce
- 2 tbsp maple syrup
- 1 tsp baking powder
- 1 tsp cinnamon powder
Instructions
- Preheat the oven to 350 degrees Fahrenheit
- In a mixing bowl, combine the old fashioned oats, chia seeds, cinnamon powder and baking powder.
- In another bowl, mix the wet ingredients- eggs, maple syrup, milk and applesauce.
- Once done, gradually pour the wet ingredients into the dry ingredients and combine till everything is mixed well.
- Finally, carefully fold in the blueberries into the prepared batter.
- Pour the batter into a greased muffin pan or silicone cupcake liners.
- Bake for 18-20 minutes, or till the center is cooked all the way through.
