If you’re looking for a healthier snack, give these a try. These strawberry tahini muffins are filled with warm strawberries, gooey chocolate, they contain no refined sugar, they are gluten free made with oats and with tahini. If you’ve never tried baking desserts with tahini, I highly recommend you give it a try. It gives these muffins such a great flavor.


WHAT IS TAHINI?

It’s toasted sesame seeds made into a butter or paste and it’s used traditionally in Middle Eastern cuisine. It has an earthy nutty flavor but also has a slightly bitter flavor when eaten alone. We never eat it alone we use it in other dishes, like hummus. Although tahini resembles peanut butter or nut butters, it does not have a similarly sweet flavor profile but when it’s added to various dishes, it gives it such a wonderful flavor.


You can add any inclusions that you like but I think the combination of the strawberries, chocolate and tahini give these muffins an incredibly delicious flavor.

Ingredients
For the muffins
  • 2 very ripe bananas 
  • 1/2 cup tahini 
  • 1/4 cup maple syrup 
  • 1.5 tsp vanilla extract
  • 1 cup almond flour
  • Pinch of salt
  • 1/2 cup rolled oats 
  • 1/2 cup gf chocolate chips
  • 1 cup chopped strawberries 
  • Additional strawberries & chocolate chips for topping.
Instructions
For the muffins
Preheat oven to 350°F
Line muffin tins with liners.
Mash bananas leaving no lumps.
Add all wet ingredients & mix well until the mixture is smooth. 
Next, add all dry ingredients & thoroughly combine.
Gently fold in strawberries & chocolate chips.
Fill each muffin liner with 1/4 cup batter.
Top each muffin with a few more strawberries & chocolate chips.
Bake at 350° F for 40 minutes or until toothpick comes out dry after inserting into muffin.
