This is one of the easiest muffins to bake that I have ever made! I promise I am not lying, anyone who doesn't have a sense of baking or cooking at all, even for them it is guaranteed to bake this dessert. In addition, this sweetness is perfect not only as a dessert, but also as a breakfast. Believe me, the combination of lemon, forest fruits and poppyseed can’t be bad under any circumstances. And to make things even better here, if you leave the glaze off, the whole muffin is completely free of added sugar. Hope you will enjoy this recipe!

Ingredients
For the muffins
  • 1/4 cup melted coconut oil
  • 1/4 cup honey
  • 1 tsp. vanilla extract
  • 1 egg
  • 1/2 cup Greek yogurt
  • 1 lemon
  • 3/4 cup flour
  • 3 tsp. baking powder
  • 2 Tbsp. poppy seed
  • pinch of salt
  • 1 cup of frozen forest fruit
  • 2 Tbsp. jam of your choice
For the glaze
  • 1/2 lemon
  • 1 Tbsp. honey
  • 1/3 cup powder sugar
Instructions

Preheat oven to 350F. Line your muffin tin with paper liners.
In a bowl, mix together the coconut oil, honey, vanilla, egg, yogurt and zest and juice of 1 lemon. Add the flour, baking powder, poppy seed and salt. Fold in the frozen berries and the jam.
Divide the better evenly among the muffin cups. Bake for 25 to 30 minutes.
Meanwhile for the glaze whisk together the zest and juice of the lemon, honey and sugar.
Drizzle the glaze over the muffins and enjoy :)
