The recipe for these muffins runs in the family for generations, passed on from grandmother to daughter, to sister-in-law, to grandson.

It is the fluffiest, most butter-y muffins I have ever tasted, and it’s suitable for any occasion, from a birthday celebration to a school function and even to a wake. I know because I brought these to all of them and never got a single complaint; well, expect the general question asking if there are any left…

You can easily double or triple the ingredients.

The ingredients ready for their transformation into muffins.

First, butter should be simmered on the stove with milk (plus vanilla extract) on the stove until the butter melts and starts to boil. This part usually is my favourite; the kitchen filled with the butter smell- the smell that represents that the magic is about to happen.

Then, I whisk the eggs and the sugar. Once I achieve a fluffy, creamy mass, I add the flour and baking powder. I let the flour blend in the batter before adding more.

When done, I give the batter a few whisks by hand to ensure there aren’t any flour pockets left. Only those who ever found a flour pocket could resemble to the pain...


The batter thickness is similar to that of honey, as seen in the picture.

Then, I pour it into muffin cups, about ½-3/4 of the cup size because they rise a lot in the oven.

It takes roughly 15 minutes to bake, enough time to do the dishes and pour a cup of coffee...

Ingredients

  • 50 gr of butter
  • 2 eggs
  • ½ cup of milk
  • ¾ cup of sugar
  • 1 cup of white all-purpose flour
  • 1 teaspoon vanilla extract
  • 10 gr baking powder
Instructions

Preheat the oven to 180 Celsius degrees.
Put the butter together with the milk and the vanilla extract in a little pot, and simmer on the stove till the butter melts and the liquid starts to boil. Let it cool for a bit.
Whisk the eggs and the sugar till you have a fluffy creamy mass.
In a small mixing bowl mix the flour and the baking powder.
Now add alternately 2-3 spoons of the milk-butter mixture and 2-3 spoons of the flour mixture. Let the flour or milk blend in the batter before you add the next batch.
When done give the batter a few whisks by hand to make sure there aren’t any flour pockets left. The batter thickness is similar to that of honey.
Pour to muffins pan or cups. Pour about ½-3/4 of the cup size because they rise a lot in the oven.
Bake for about 15 minutes until the crust is golden.   That’s enough time to clean the dishes and prepare a fresh mug of coffee…
Tips
  • Add toppings for extra festiveness. I recommend either Nutella or Dulce De Leche
