5 Ingredient Easy Lemon Cake Mix Muffins

Did you know that cake mix can be used for all kinds of things other than cake? This is one of my favorite baking short cut secrets and it’s a great way to get a head start on fall or holiday baking, for for making special treats for any time! We often use cake mixes here at Two Kids and a Coupon for cake mix cookies, delicious baked breads, marvelous muffins and more.

Recently we shared some delicious pumpkin chocolate chip muffins and apple spice bread that use cake mixes as a head start and these easy recipes have been such a hit, I wanted to share another delicious muffin recipe for your family to enjoy.

These tasty lemon cake mix muffins use a mix as a head start and only require a couple of ingredients. They are easy to make by yourself or as a beginner recipe for the kids to try out. To get started, you’ll need a muffin pan, a mixing bowl and large spoon or a stand mixer and some cupcake liners. You’ll find the handy step by step instructions below and there’s also a Pinterest pin and printable recipe card if you’d like to save this for later.

To make these muffins for your family, you’ll need a box of lemon cake mix, 1/2 cup of melted butter, 3 eggs and 1/2 cup milk. You can also add sugar as a garnish for a bit of extra sweetness, but this ingredient is optional.

To get started, you’ll want to pre-heat oven to 350 degrees and line a muffin pan with cupcake liners.

In a large mixing bowl or using a stand mixer, you’ll want to combine the cake mix, eggs, milk & butter. Scoop the batter into the muffin tin and if desired, sprinkle a little sugar on top of each muffin (optional).

Bake your lemon cake mix muffins for 15-20 minutes or until a tooth pick comes out clean. Store any leftover muffins in an airtight container.
