In this cake you will find everything you could wish for: an almond cookie dough base, creamy chocolate frosting, and fresh fruit to make it complete. It started out as a ''save whatever there is in the fridge and pantry'' idea, and believe me, this is how the best recipes are born. I tried to make it as healthy as possible, maybe if it is not sweet enough for you, just add more sugar. If you want to make it gluten-free, feel free to use gluten-free flour instead of spelled wheat. And if you’re vegan, use chia or flaxseed eggs and vegan, dairy-free cream cheese.

Ingredients
- 50 g sliced almonds, roasted
- 100 g butter, softened
- 3 eggs
- 150 g yogurt
- 75 g brown sugar
- 200 g spelt flour (or flour of your choice)
- 1 tsp. baking powder
- pinch of salt
- lots of berries (or any kind of fruit), cut into small pieces
- 250 g Mascarpone/cream cheese
- 100 g dark chocolate, melted
Instructions
- Preheat oven to 170C (with fan). Grease a 18 cm cake form.
- In a mixing bowl mix together the butter, eggs, yogurt and sugar. Then add all the dry ingredients (flour, baking powder, salt). Lastly, stir in the almonds and berries (save some for decorating).
- Bake for 30 minutes.
- Let the cake cool, then add the frosting on top and sprinkle the top with berries.

It would be handy if this could be converted to those antiquated American measurements. I like the recipe but will now have to look up each of the measurements as I am still not fluent in grams, centimeters and Celsius. I encourage the next generation to become so.
