Ever since I made a Jack & Coke cake – I wanted to put the same flavors into cupcakes! Layer cakes are super fun, but they can be a bit time-consuming and laborious…these cupcakes carry the same flavors but come together in way less time with way less effort!

I read that cupcakes can be made with a boxed mix and a can of soda – I wanted both of the flavors in the cupcake, so I subbed about 4 oz of Jack Daniels whiskey along with 8 oz of coke in the cupcakes. It worked! I wanted coke in the filling and Jack Daniels in the frosting….and I think it worked out pretty well!

Ingredients
Cupcakes
  • 1 boxed white/vanilla cake mix
  • 8 oz coca cola
  • 4 oz Jack Daniels whiskey
Jack Daniels Buttercream Frosting + filling
  • 8 oz (one package) cream cheese, softened
  • 16 Tablespoons (two sticks) butter, softened
  • 6-7 c powdered sugar
  • 2-4 Tablespoons Jack Daniels whiskey
  • 1/4 t. salt (if using unsalted butter)
  • Save and add later - 1 Tablespoon Coca Cola extract (I found this on Amazon)
Decorations
  • 24-48 Coke gummies – I found these at a local grocery store; I thought they made a fun topping 😉 You could buy them on Amazon if they’re not sold in your area. I know people that hate these; you can leave them off if you prefer; I just thought they added a fun touch!

Preheat oven to 350 degrees. Preheat oven to 325 F. Line cupcake pans with paper wrappers. Combine cake mix with soda and whiskey; beat with a wire whisk for 2 minutes. Spoon into prepared wrappers, and bake until firm to the touch in the center – this took about 15 minutes in my oven. Cool completely on wire racks.
Meanwhile, make your frosting!
Jack Daniels Buttercream Frosting + filling
Beat together softened cream cheese and butter; slowly add in powdered sugar alternating with whiskey until frosting reaches desired consistency. Add salt and beat until well combined.
Remove about ¾ c of frosting from the bowl into a smaller bowl, and add about 1 tablespoon of coca cola extract – I bought this extract from Amazon.com 😊 This will be your filling once your cupcakes are cooled and cored.
Decorations
Once the cupcakes have cooled, you're ready to core them. There are a few ways you can do this....you can buy a cupcake corer, you can try using the non-business-end of a large piping tip, or....you can do what I do and cut a cone-shaped core out with a plastic knife. Up to you ;) I haven't the foggiest idea why cupcake crumbs don't stick to plastic knives like they do regular knives, but the plastic knife's been working too well for me to feel the need to invest in any fancy corers ;) I did struggle with these cupcakes a bit more than usual; I think the lack of added fat and eggs to the mix made it a little bit more crumbly and sticky on top. :/ I got it to work though. Pipe your filling into your cored cupcakes - it doesn't have to look pretty, so I often use a zip-lock bag for this part. ;) 
Transfer your Jack Daniels frosting into a large piping bag with your desired piping tip – I used a large closed-star tip for these. Pipe frosting in large swirls onto your cupcakes (or however you feel like icing them). ;) Decorate the top of each frosting swirl with a coke gummy candy if you’d like….done and done! Enjoy! :)
