Christmas Tree Cupcakes

Soft, fluffy chocolate cupcakes with an awesome Christmas Tree on top, these are the perfect decorative cupcakes to display and devour during your next Christmas party. If you are having a feast this will surely be a perfect finishing treat.

Its that time of the year when people start baking ginger bread cookies, ginger bread house, star-bread, and other things that resemble Christmas in some way. So here we are, yet again, with our cute little Christmas tree cupcakes. Gotta confess, it was a bit of work to make it happen. The cupcake itself was pretty easy to do. Getting the frosting and the piping done right was a struggle, but a fun one, I have to admit.

We tried a different type of frosting this time. Ermine. Its different from the traditional frosting we usually get from a commercial bakery. Ermine frosting uses flour as part of the ingredients to give it a thicker and more sturdy frosting. It could stay without being refrigerated for up to 6 hours. So if this is your first time trying out frosting and doing some piping or shaping work with it, ermine would be a good start since it won’t melt easily or lose shape. Plus, it tastes pretty good too and smooth as regular frosting.

As we all know, cakes have been around for ages. The idea of tiny cakes came into the picture through a cookbook by Amelia Simmons called ‘American Cookery’ in 1796. The word cupcake didn’t exactly come into existence until the 1800s. Once the concept picked up popularity, it became famous among home and commercial bakers though they were not always based in cupcake lines back then. Before muffin tins or cupcake pans were used, cupcakes were baked in ramekins, which were basically small pottery bowls.

Ingredients
Chocolate Cupcake
  • 1.5 cup All purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Cocoa powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Almond milk Or regular milk
  • 1/2 cup Olive oil Or any other cooking oil
  • 1 tsp Vanilla extract
  • 2 tsp Vinegar
  • 13 Waffle cones
  • Powdered sugar for dusting
Ermine Frosting
  • 1 cup All purpose flour
  • 4 cup Granulated sugar
  • Pinch of Salt
  • 4 cup Almond milk Or any other milk
  • 2 tsp Vanilla extract
  • 4 cup Unsalted vegan butter Softened at room temperature
  • Green gel food color As needed
Instructions
Chocolate Cupcake
Preheat oven to 350 F
Line a baking tray with cupcake liners
In a large bowl, mix together all dry ingredients, except sugar, until well combined
In a separate bowl or container, mix vinegar and buttermilk together and let it sit for 10 minute
Add granulated sugar to the mix and whip until all the sugar has melted
Add in the oil and mix it again till everything is well combined
Add the liquid mixture into the dry ingredients and use a whisk to mix everything is combined and you a get a smooth batter with very little or no lumps
Pour out the batter into the cupcake liners. Fill up to 3/4th height of the liners
Bake at 350 F for 18- 20 mins or until a toothpick comes out clean from the cupcake
Let them cool to room temperature before you apply frosting
Ermine Frosting
Add sugar, flour and salt into a medium saucepan and mix.
Add in the almond milk and vanilla extract.
Turn on the heat to medium and stir until the mixture starts to boil
Keep stirring continuously for the next 2 minutes until the mixture thickens to a pudding-like texture. After this, remove the pan from the heat
Transfer to a bowl, wrap it with a plastic wrap and let it cool down to room temperature. The plastic wrap ensures that the mix does not create a dry thin layer on top.
On a separate bowl, beat up the butter to a fluff using an electric beater.
Add the flour mix to the butter, 1 tbsp at a time and beat until mixed well. Repeat this till all the flour mix is added in.
The frosting is ready at this point. You can store it in the fridge in an airtight container for up to one week (Let it reach room temperature and whip it up before using)
Applying the frosting
Separate out 2 cups of the frosting for applying on the cupcake to represent snow
Add green food color to the rest of the frosting and mix. Repeat till you get the desired color for the tree.
Apply the white frosting on the cupcake as a thin layer as shown in video
Apply a thin layer of green frosting on the waffle cones and place the cones on the cupcakes
Put the green frosting in a piping bag (or a sandwich bag). Use a Closed Star tip (we used No. 5 star tip by Kitchwise) and pipe out the Christmas tree on the waffle cones.

  • Absolutely love this! And "trees" can be served at any time during the year. Actually like ermine better than buttercream and lends itself to trying different flavors. I have made almond, lemon and bourbon frosting. These are certainly worth the effort you put into them. Not entertaining anytime in the foreseeable future, however I have my bubble buddies that we have quarantined with since February of this year. They need treats too! Will cut the recipe in half and give it a go. Will make a nice place setting for their Christmas meal. Thanks for such a fun project! Happy Holidays to you and your family. 🎄
