  • 2 cups self raising flour
  • 2 cups sugar
  • 4 eggs
  • 200 ml canola oil
  • 1 tsp vanilla essence
  • 2 tbsp espresso powder
  • 2 tbsp boiling water
  • 3 green apples, peeled and sliced

Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit). Prepare a round springform pan, line with parchment paper and spray with spray oil to prevent sticking.
In a large mixing bowl, combine the flour, sugar, eggs and vanilla and stir until well incorporated. Add in the oil.
In a small bowl, mix together the espresso powder with the boiling water, pour it into the batter.
lay the apple slices at the bottom of the pan and pour the batter on top.
Let the cake bake for 35 minutes, it should have turned golden and a skewer poked to the middle should come out clean.
Remove from the oven and serve.
