I think one of my favorite things about Summer is all of the fresh fruit! Don’t get me wrong, there is nothing wrong with the produce section at our grocery store, however, there is just something about heading out to the garden and picking a fresh berry straight from the vine.


If you love growing your own fruit or even if you get your fruit from your local farmers market, here are a few other easy recipe ideas to use up your fresh fruit finds!

Step by Step Directions


Step 1: Preheat oven.


Step 2: Prepare a mini muffin pan.


Step 3: Break apart the cookie dough into small yet equal parts and place into each cavity of the pan.


Step 4: Bake.


Step 5: Remove from the oven and let cool for a few minutes.


Step 6: Remove from the pan.


Step 7: Make the cheesecake.


Step 8: Spoon the cheesecake into the cookie cups.


Step 9: Top the cookies.


Step 10: Chill and serve.

Wondering what you can add to your store bought sugar cookie dough to make it better? You can add spices, nuts, extracts, flavoring oils, mini chocolate chips, or even crushed pretzels.


How do I know the cookie cups are done?


If the middle of the cup looks “wet” after pressing in the middle of them with your finger, put them back into the oven for a few minutes. If they look dry, they are done.


How do I remove cookie cups from the tin?

Ingredients

  • 1 pkg store bought sugar cookie dough – make sure it's precut. The 24 pk one works the best.
  • 4 oz cream cheese softened
  • 1 cup powdered sugar
  • 1/2 tbsp. pure vanilla extract
  • strawberries
  • blueberries
  • 1 kiwi
Instructions

Preheat the oven to 350 degrees.
Spray your mini muffin pan with your favorite cooking spray.
Open up your cookie dough package and cut the cookie dough in half then roll into a ball.
Place the balls into the muffin tin then using a small measuring spoon, press the spoon into the dough.
Place the tin into the oven and bake for 10-12 minutes until the cookie cups are done.
Remove the pan from oven and transfer it to baking rack to cool for about five minutes.
Once they have cooled down a bit, use a butter knife, small spatula, or your fingers and remove each cup from the pan.
In a medium sized bowl, using a hand mixer, mix together the cream cheese, powdered sugar, and vanilla.
Mix the ingredients together until the mixture is smooth and creamy.
Spoon the cheesecake into each cup.
Cut or dice the berries into any shape you'd like and arrange on top of the cookie cups.
Next, peel the kiwi, cut into slices, then cut into quarters and add to the cups.
Refrigerate your cookie cups then serve. Enjoy!
