I’ll take any excuse to make a meal out of appetizers. Sit me down for dinner and serve me three or four appetizer options, and I’m golden. I love finger foods, little two-bite bundles of goodness that fill that variety craving I always seem to have.

Lately, I’ve been on an egg roll kick, and not just the kind I always order with Chinese takeout. I’ve been to several restaurants lately that have one or two egg roll options on their menu. Ones like southwest egg roll, to Philly cheesesteak; shrimp and grits egg rolls to bar-b-que duck filled ones. Those special wrappers can pretty much house whatever filling your heart desires. Fold, roll, fry and you’ve got yourself a custom egg roll, and albeit a delicious appetizer.

This got me thinking – what if I created an egg roll recipe that celebrated St. Patrick’s Day, and really, any day in between. How about a Reuben egg roll?


Sure thing!

Corned beef with sauerkraut and Swiss cheese rolled up and fried with a homemade thousand island dressing on the side for dipping. Hey, I’m game!

Like any recipe, it took some thought; how to fry watery sauerkraut? That stuff would need to be thoroughly drained stopping short of drying it out completely. Then I turned to the corned beef; I hit up the deli counter for that, but I was left with the question of whether I wanted to lie a slice or two down first, or should I chop the meat? I went with the chop method as I felt that would offer a better bite. Same for the cheese, a good grating rather than a slice.

From here I turned to the thousand island dressing. The store bought kind is good, but naturally, I wanted to make my own. Lots and lots of great recipes for that out there, and I added my own little twist that totally made an excellent difference.

My Secret To Making The Best Thousand Island Dressing


There are three main ingredients when making thousand island dressing: ketchup, mayo, and sweet pickle relish. Most recipes include a tablespoon of vinegar whether it’s white distilled or apple cider vinegar, and also a chopped yellow onion. And this is where my eyes stopped and made me think – that’s a lot of onion and I not sure I’d like to have little pieces of onion in my thousand island dressing.

Here’s my secret: I used a shallot rather than a yellow onion for more of a mild flavor, and I grated it rather than diced it. I grated the shallot into a bowl and then added it to the dressing including all of the juice that was given off when grating the shallot. This is where all of the flavor is, and totally made the dressing be the best ever thousand island dressing! Trust me on this.


Now that I had all of the recipe kinks ironed out, I was ready to rock.

Ingredients
Thousand Island Dressing
  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 2 tbsp sweet pickle relish
  • 1 tbsp shallot finely grated on a micro grater
  • salt and pepper to taste
Reuben Egg Rolls
  • 1/2 pound deli sliced corn beef
  • 1/2 cup gruyere cheese grated
  • 1/2 cup sauerkraut drained
  • 1 18-ounce package egg roll wrappers
  • 1 liter vegetable or canola oil
Instructions
Thousand Island Dressing
In a medium sized mixing bowl, combine mayonnaise, ketchup, relish, apple cider vingar.
Over a small bowl, finely grate a tablespoon of shallot, reserving all of the juices. Pour shallot and juices in the mayo mixture and stir to combine.
Season with salt and pepper to taste and let rest at least 30 minutes for the flavors to blend.
Can be stored in an airtight container in the fridge for up to 7 days.
Reuben Egg Rolls
Place sauerkraut in a strainer and drain out as much liquid as possible, pressing on the kraut with the back of a spoon. Then, place kraut in a clean dish towel and squeeze out the remaining liquid and place in a small bowl.
Chop the corned beef into shaving-sized pieces. Place in a small bowl.
Grate the gruyere cheese. Place in a small bowl.
Fill a small bowl with water and put aside.
Place one egg roll wrapper flat on work surface.
Spoon roughly two tablespoons of the corned beef onto the bottom third of the wrapper.
Spoon 1 tablespoon of gruyere over the corned beef.

Take the bottom of the wrapper and fold over the corned beef.
Fold the sides in toward the middle, and roll the rest of the way down the wrapper.
Using a finger and dip it into the water, then run along with end of the wrapper to secure the seam.
Place egg roll on baking sheet and cover with the damp dish cloth. Continue and assemble and roll the rest, keeping all under the damp towel as you go.
Place one liter of oil in a Dutch oven and heat to 375 degrees.
Fry the egg rolls until cooked through and golden brown, 3-4 minutes.
Drain on drying rack, dabbing with paper towels if necessary.
Serve warm with homemade thousand island dressing!
