Summer means adventures and exploring...so it means food that is quick and easy...but also delicious and light! Confession: I love love love Trader Joe's, so I'm forever experimenting with their products. This recipe gets some of its most important flavors from two items from Trader Joe's: their Organic Corn Dippers and their Corn Salsa. If you've got a Trader Joe's near you, try these for a quick and easy delicious summer time meal!
Trader Joe's Corn Salsa is a YUMMY addition to wraps and salads!
I usually add a sprinkle of shredded Mexican cheese to my wraps!
Make sure to pack your wrap! I press on the ingredients to pack them in as I roll to ensure a tighter wrap!

- Spinach Tortillas (one for each wrap)
- Protein of Choice (I used shaved beef, but chicken is yummy too)
- Olive oil and butter to cook your protein
- Romaine salad mix
- Trader Joe's Corn Dippers
- Trader Joe's Corn Salsa
- Shredded Cheese
- Ranch Dressing

- Cook your protein. I used shaved beef seasoned with garlic powder, salt, and pepper. Since I was making two wraps, I used a tablespoon of butter and 2 tbsps of olive oil. Heat over medium in a medium frying pan. Once melted, add your protein in a single layer and cook.
- In a prep bowl, cut your lettuce into smaller pieces.
- Add crushed corn dippers (one handful works for two wraps, so use two handfuls for 4 wraps).
- Add cheese (1/3 cup for two wraps, 2/3 cups for 4 wraps).
- Add corn salsa (one heaping tablespoon for two wraps, two heaping tablespoons for 4 wraps).
- Toss to blend, then add your ranch (I like a lot dressing, so I tend to add more than other people - use enough to moisten your entire filling mixture - about 2 tbsps for two wraps, 4 tbsps for 4 wraps).
- Spoon filing into center of tortilla in a line, then add your protein.
- Roll and tuck - make sure as you do this, that you push on your filling to pack it in tightly - this ensures your wraps stay together!
- Cut in half, and serve with additional ranch for dipping (optional).

I NEVER know what to do with wraps, are they supposed to be hot or cold, so far, not nice either way. Any suggestions. If hot, do I microwave them?
