When the crisp air rolls in and the leaves begin to change their colors you know autumn has arrived.

BUTTTTT.....

"What if" you relocated to a tropical state to support your family and your yard now has coconut trees instead of oak trees?

Yup, I trick myself into believing the Sunny State of Florida has seasons by switching up my recipes.

I never knew how important my cooking style was until moving here a few years ago.

This bread is an easy breakfast on the go!

If you're baking for friends and would like to add a cute  food gifting labels you'll find some labels in our SHOP.

This bread freezes well and makes your house smell amazing!

You could increase the sugar to 3 cups without changing the texture of bread or add icing if you prefer a sweeter dessert pumpkin bread.

Ingredients
Makes 3 Loaves
  • 1 15 oz can Pumpkin puree (I use Libby's)
  • 2 3/4 cups Sugar
  • 2/3 cup Whole milk
  • 1 Cup Vegetable oil
  • 3 1/2 cups All-purpose flour
  • 2 tsp Baking soda
  • 1 1/2 tsp Salt
  • 1 1/2 tsp Cinnamon, ground
  • 1/2 tsp Nutmeg, ground
  • 1/2 tsp Cloves
  • *optional dash of ginger
  • 4 Eggs
Instructions

Preheat oven to 350 degrees F or 175 C. Spray loaf pans with non-stick spray and flour all 7x3 inch pans.
In a large bowl, mix together pumpkin puree, sugar, eggs, oil, and milk. To avoid a mess in the kitchen, I ALWAYS add my dry ingredients in the same bowl. To ensure the ingredients are well-blended, begin by adding half of the flour, baking soda, salt, and spices and give it a GOOD stir. Next, add the remaining flour and stir until the mixture is well-blended.
Place in oven and begin checking the pumpkin bread at around 45 minutes. Loaves are done when your inserted knife comes out clean.
Tips
  • Sometimes I add unsalted pumpkin seeds as a garnish when serving.
  • A few of my friends slice the pumpkin bread and add a layer of cream cheese when serving.
  • This bread freezes well and makes your house smell amazing!
  • You could increase the sugar to 3 cups without changing the texture of bread or add icing if you prefer a sweeter dessert pumpkin bread.

Recipe calls for eggs but none are listed in ingredients. I really wanted to try this.

I sent an email to the admins at Food Talk, they're on it! If you're able to update the review after your bread comes out amazing...let me know. I hope your family likes it. Stay safe.

After finding out how many eggs were needed I made this this morning. It is delicious. Very easy to make. I did add some chopped walnuts. Got two loaves of bread. Will definitely make again.

Glad to hear it! Some of my readers toast it and spread cream cheese on it for breakfast. I would have never thought to do that.
