The chill is certainly in the air here in NY and that means one thing in my house...it is Pumpkin Bread time. This may be my favorite recipe of all time! Pumpkin lovers will rejoice after tasting this bread. It is super most and so delicious.


I am typically not a baker, but when every Autumn rolls around I find myself making this Pumpkin Bread recipe multiple times. The smell that fills the house is my favorite and the moistness of this bread is just perfect. You can make this recipe with or without walnuts (or any favorite nut of your choice really) and it will be equally delicious.

Ingredients

  • 1 1/2 cups white sugar
  • 1 cup pumpkin puree
  • 1/3 cup vegetable oil
  • 1/3 cup water
  • 2 large eggs
  • 1 2/3 cup all purpose flour
  • 1/4   tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/8 tsp ground nutmeg
  • 1/3 cup walnuts, chopped (optional)
Instructions

Preheat oven to 350 degrees.
Lightly spray a large non-stick loaf pan and sprinkle with flour. Shimmy the flour around to coat the bottom and sides of the loaf pan and discard any excess flour. Place a sheet of parchment inside the loaf pan and set aside.
In a large bowl mix together the sugar, pumpkin puree, vegetable oil, water and eggs until thoroughly combined. In a another large bowl combine flour, baking powder, baking soda, salt, cinnamon, cloves and nutmeg. 
Take the dry mixture and add it to the wet ingredients. Combine well until batter is smooth. At this point you can fold in the chopped nuts if you are using. Pour the mixture into the loaf pan and bake for 55-60 minutes. 
Remove from oven and let sit for about 10 minutes before taking it out of the loaf pan. Once it has slightly cool, lift out of the loaf pan but simply grabbing the sides of the parchment paper and then peel the parchment paper off. Place on a serving dish and enjoy.
Tips
  • TIP: if you using nuts in this recipe, toss them in 1 tbsp of flour to coat. This will help the nuts to not sink to the bottom of the batter.
