This is a really good recipe, even if you aren't gluten free. The maple flavor really complements the pumpkin and the pumpkin spice. It has a delicate flavor, and it's not too sweet.
This uses real pumpkin. You can use canned pumpkin or fresh pumpkin puree. Just make sure you use real pumpkin and not pumpkin pie filling.

Ingredients
- 2 cups quick cooking oats
- 2 cups pumpkin puree (not pumpkin pie filling)
- 1/2 cup real maple syrup
- 2 eggs
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
Instructions
- Preheat oven to 350 degrees. Grease a loaf pan and set aside.
- All all of the ingredients to a blender. Puree until smooth.
- Pour healthy pumpkin bread recipe batter into the pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
