How to make a flourless pumpkin bread recipe with oats. This uses maple syrup to naturally sweeten it.

This is a really good recipe, even if you aren't gluten free. The maple flavor really complements the pumpkin and the pumpkin spice. It has a delicate flavor, and it's not too sweet.

This uses real pumpkin. You can use canned pumpkin or fresh pumpkin puree. Just make sure you use real pumpkin and not pumpkin pie filling.

This is a blender recipe, and you make everything in the blender. Yay for less clean up!

I have some tips on my gluten free flourless pumpkin bread recipe, so be sure to click over to read them before you make it. You can freeze leftovers. I wrap mine in compostable plastic wrap and put it in a freezer bag. It freezes up to three months.

Diabetic hubby … can a person substitute maple syrup for stevia or powdered monk fruit?

The maple gives it some flavor, so I'd also recommend a sugar free syrup. You could probably use stevia or other sweetener, but the bread may be bland.
