Healthy Cranberry Orange Bread

This healthy cranberry orange bread is as beautiful to look at as it is delicious to eat. Studded with flecks of cranberry and infused with orange zest and juice, you’ll be hard pressed to find a breakfast or snack as flavorful and beautiful as this healthy bread. It’s slightly sweet from the orange and honey, a bit tart from the cranberries, and pleasantly spiced from a dash of cardamom. It smells and tastes like the holidays, and I hope you love it as much as I do.

Ingredients

  • 1 cup cranberries (fresh, not dried)
  • 2 cups whole wheat pastry flour
  • 1 tsp baking power
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cardamom or cinnamon
  • 1/3 cup olive oil (sub 1/3 cup melted butter)
  • 1/3 cup honey or maple syrup
  • 1 to 1.5 tbsp orange zest, from about 2 oranges
  • 1/2 cup freshly squeezed orange juice, from about 2 and a half large oranges
  • 1/2 cup non-fat greek yogurt (2% or whole milk will also work)
  • 2 large eggs at room temperature
  • 1 tsp vanilla extract
Instructions

Preheat oven to 350 degrees and coat an 8×4 in loaf pan liberally with non-stick spray.
Pulse cranberries in a food processor for 5-10 seconds, until broken into bits but not pureed. Set aside.
In a large bowl, mix together flour, baking soda, baking powder, salt, and cardamom. Set aside.
In a separate large bowl, mix together olive oil and honey until well-combined. Add in orange zest and juice and yogurt, whisking until thoroughly combined. Finally, whisk in eggs and vanilla extract.
Fold in cranberries.
Transfer mixture to prepared pan, distributing batter evenly.
Bake for 45-55 minutes, until a tester comes out clean. Cool on a wire rack before slicing and enjoying!
