Hearty Banana Bread

I always buy a bunch of bananas. I like to freeze some smoothies and I used to have to find the patience to wait for the rest to get super ripe to make banana bread. But if you're in the same waiting boat, I have some tips for ripe bananas FASTER.


You can ripen bananas faster two ways. 1) Leave them in a paper bag. This will still take a day or two, but will ripen them faster than if you just leave them out on your counter. 2) Baking them at a lower temperature in the oven. This will turn the outside of the banana black, but don't worry, the inside will be perfectly ripe for your banana bread.

Ingredients

  •  1/3 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1/3 cup coconut sugar
  • 1/4 cup almond milk
  • 2 eggs
  • 3 ripe bananas
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp baking soda
  • 1 3/4 cup whole wheat flour
  • optional toppings: pumpkin seeds and a flax chia blend
Instructions

Preheat the oven to 325.
Mix the wet ingredients and then fold in the dry ingredients.
Pour into loaf pan and add toppings.
Bake for 55-60 min.

    If I can’t get coconut sugar can I use plain or brown sugar instead?
