Pumpkin Pie Smoothie

I mostly make smoothies in the spring and summer, but after making this Pumpkin Pie Smoothie, I may be making more of them in the autumn! It’s always nice to have a healthier treat like this that has the flavors of fall!

This smoothie has a lightly creamy texture and is flavored with pumpkin, cinnamon, and apple cider. I also used plain kefir in it, but you could substitute plain yogurt, and that would make the smoothie a little more creamier and thicker.

 I’ve also included other ideas in the recipe on how to thicken it up more if you prefer your smoothies on the thicker side!

Ingredients

  • 1/2 cup plain kefir (or substitute plain yogurt for a thicker smoothie)
  • 1/2 cup apple cider or unsweetened apple juice
  • 1/4 cup unsweetened pumpkin puree (not pumpkin pie filling); (if you’d like a thicker smoothie, use 1/3 cup puree)
  • 1/2 medium fresh or frozen banana (for a thicker smoothie, use a whole frozen banana)
  • 2 Tablespoons pure maple syrup or honey
  • 1/2 to 1 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 cup ice cubes (or use a little more, like 2/3 to 3/4 cup, for a thicker smoothie)
  • Optional: Additional ground cinnamon, for sprinkling on top
Instructions

Place all ingredients in a blender and blend until smooth. If desired, sprinkle some additional cinnamon on top!
