It may sound like a strange combination, but it's totally worth doing if you want to try out something different with sweet potatoes, rather than just roasting or steaming them.


Do get the purple sweet potatoes, they have quite a distinct flavour compared to, for example, the yellow kind you may find in your supermarket. Also they have a gorgeous, natural colour.


For vegans and vegetarians, you can substitute out cow milk with coconut milk. I don't really recommend oat milk or almond milk as the milk should be creamy and thick, but if you're out of options, it will work.

Ingredients

  • 100 grams cooked ube or sweet purple potatoes, mashed or blend in a blender
  • 2 tbsp condensed milk
  • pinch of salt
  • ½ cup fresh milk
  • ½ cup regular coffee
Instructions

Blend the mashed boiled ube with salt and condensed milk in a blender.
Add the mix into a prepared cup. Pour the milk and coffee. You may add ice cubes if you want to serve it as iced ube latte.
