Skinny Gingerbread Latte Recipe

The big coffee shop may have discontinued the gingerbread latte, but you can still make one at home. This is a skinny version that can be sugar free and dairy free.
First, you'll make a gingerbread syrup. The syrup recipe makes enough for several cups of coffee, but you can keep it in the fridge for several days. You can also buy a sugar free gingerbread syrup and use that instead.
For the syrup sweetener, you can use white sugar or a substitute. I recommend coconut sugar, stevia, or monk fruit.
To make the gingerbread latte, you'll use a milk product. You can use cow's milk or use oat milk or almond milk for a vegan option.

Sugar Free Gingerbread Syrup
- 2 cups water
- 1 1/2 cups monk fruit or stevia
- 2 1/2 teaspoons ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
Skinny Gingerbread Latte
- 1/2 cup fresh espresso
- 8 ounces of oat milk or almond milk, steamed
- 1-2 tablespoons gingerbread syrup
- coconut whipped cream
- ground nutmeg
Instructions
For the Syrup
- Combine the ground ginger, ground cinnamon, water, and vanilla extract in a medium saucepan. Heat over medium heat while stirring until it comes to a boil.
- Remove from heat and let simmer for 15 minutes.
- Pour into a container and let cool.
For the Latte
- Add fresh brewed espresso or coffee and steamed milk to a mug. Add gingerbread syrup to taste. I recommend using 1 tablespoon to start.
- Top with whipped cream and sprinkle nutmeg on top.
- Brew coffee or espresso and let cool.
- Add ice to a cup.
- Pour cooled coffee or espresso and cold milk over ice. Add gingerbread syrup to taste.
- Top with whipped cream and sprinkle with nutmeg.
Tips
- The nutritional information will be off because this makes more syrup than you'll need.
