It is pumpkin season! We are a couple days away from October which means my whole house is getting ready to smell like pumpkins, apples, cinnamon, all the Fall scents! I like making a big batch of this pumpkin spice creamer at the beginning of the week to use throughout the week.
I am not lactose intolerant, but I do enjoy making plant-based food items whenever I get the chance.

Drain mixture through small holed strainer, cheesecloth, or nut bag

Ingredients
Pumpkin Spice Creamer (no dairy)
- 1/2 cup soaked cashews
- 1.5 cups filtered water
- 2 tbsp maple syrup or honey
- 1 tbsp pumpkin puree
- 1 tsp vanilla extract
- 1 tbsp pumpkin spice seasoning
Instructions
Pumpkin Spice Creamer (no dairy)
- Add all ingredients to a high speed blender
- Blend ingredients until smooth for 2-4 minutes
- Drain creamer into large mason jar and store in fridge
Tips
- Soak cashews overnight or for at least 5 hours
- Play around with sweetener, can also use brown sugar
