I recently traveled to Vietnam and while there were so many delicious dishes I tried and had the opportunity to learn how to cook, one of the easiest recipes I learned was egg coffee. Now I know what you're thinking - eggs in coffee?


Just trust me, this turns your coffee into a delicious dessert. Think custard or tiramisu - it's similar to those. I've made this numerous times since returning home and it's been such a hit. It is quite rich and filling so I definitely recommend serving this at dessert instead of first thing in the morning - but to each their own!


You can use plain sugar or condensed milk to add sweetness, the ratios and recipe is the same.

Ingredients

  • 4 egg yolks
  • 4 tbsp sugar or condensed milk
  • 1 tsp vanilla (optional)
  • cinnamon powder to serve (optional)
  • 4 cups of prepared coffee
Instructions

Separate the yolks from the whites on all eggs
Add the sugar or condensed milk to the yolks
Add the vanilla if you are using it
Mix the yolks and sugar or condensed milk on high for five minutes straight, moving the mixer back and forth until thick and fluffy
Divide the mixture between 4 cups then pour in your prepared coffee
Garnish with some cinnamon powder if preferred
Tips
  • The ratio per serving is 1 egg yolk to 1 tbsp sugar or condensed milk
  • A hand mixer is necessary to achieve the proper texture. I do not recommend stand alone mixers, blenders, or food processors.
